Definitely some nice presentations, curious why you left the skin on the salmon?

OMG, I love the nice crispy skin from salmon almost as much as nice crispy chicken skin. I often have to arm-wrestle my wife for the salmon skin when we cook it...

Give it a try next time you make salmon...

Lol. I'm not a fan of the skin, but my girlfriend loves it. So we leave it on and she gets to eat it.

Made bouillabaisse tonight and baked some bread...

Da bread...it's wonderful with the butter and truffle salt we served it with to dip in the fish stew.

I made an enchilada casserole last night, with black beans, lots of onions, garlic, and ground beef. Came out fantastic!

Yes, I lined the bottom with sauce, then a layer of shells, then a layer of meat mixture, cheese, then sauce, then another layer of shells, meat, cheese and sauce. My mom always made this as a casserole when I was younger so I wanted to give it a try

Hmmm...that's a good idea, I may give it a try next time we do enchiladas. We usually do the traditional way of rolling them up first but this is way easier/faster.

My wife and I don't consider ourselves gourmet chefs but we do enjoy good food...most of what we prepare is pretty easy, TBH.

We just have a bit more time to prep and plate nicely now since well, we're under house arrest.

Hawaiian Kabobs on the grill last night

Had more food than skewers, so the rest was tossed on the side.
