OMG, I love the nice crispy skin from salmon almost as much as nice crispy chicken skin. I often have to arm-wrestle my wife for the salmon skin when we cook it...

Give it a try next time you make salmon...

i bought a roast duck and some bbq pork.

didnt get to buy from the good place i usually go to in SF Chinatown because they were closed..

lets just say im never going back to other place i went to.

Yes, I lined the bottom with sauce, then a layer of shells, then a layer of meat mixture, cheese, then sauce, then another layer of shells, meat, cheese and sauce. My mom always made this as a casserole when I was younger so I wanted to give it a try

Hmmm...that's a good idea, I may give it a try next time we do enchiladas. We usually do the traditional way of rolling them up first but this is way easier/faster.

First Lady made some Meyer lemon cake using the Halikulani cake recipe...she's a great baker...

Dinner tonight was grilled chicken a la butter chicken seasoning in brioche buns; side was a cabbage slaw and curry spiced potatoes...pretty easy.

My wife and I don't consider ourselves gourmet chefs but we do enjoy good food...most of what we prepare is pretty easy, TBH.

We just have a bit more time to prep and plate nicely now since well, we're under house arrest.
