Tonight: pork chops with cauliflower & cheese ravioli and a cauliflower base Alfredo. There was still cheese in it, but no flour. Or something... I don't know, Casey was in charge of the sauce

Meal kit the other night with an easy recipe with a different take on a classic meal. Instead of broccoli and cheddar soup it was broccoli and cheddar grilled cheese. They were fantastic. Definitely will keep this and make again.

made cornbread for the first time last night using Alton Brown’s recipe . Didn’t have buttermilk on hand so mixed regular milk with a tablespoon of lemon juice as that’s supposed to be a viable substitute. It tasted fine but i would love to remake it with true buttermilk to see if will be any better. Paired it with some ribs dry-rubbed, baked in the oven for a few hours, slathered some Sweet Baby Ray’s, and then broiled for a few minutes. Came out good! Should have made some slaw to round out the meal but

It could've had more flavor, but we didn't have just coconut cream and the cans of coconut milk we did have on hand weren't separated. It ended up being a bit too watery, so if I use this recipe again I'm going with just coconut cream.

Marinating the chicken overnight was definitely important though - the chicken itself was delicious.
