We decided to celebrate Cinco de Mayo right, and made some enchiladas tonight. I used the Instant Pot this afternoon to make and then shred 4 chicken breasts. Casey made the cheese sauce and assembled the enchiladas. I made the enchilada sauce (so I basically did nothing )

We did the chimichangas last night and they turned out amazing! I forgot to take pics but I'm making another one for lunch today so I'll take one then.
During one of my first trips in March to Sam's club, I happened to grab some corned beef briskets. Had been waiting to do something with them, so I cooked one in the crockpot with some of my homemade Simcoe IPA and made reubens out of them.
Had the wife grab a loaf of rye bread and thousand island on one of her grocery store runs
Man I love that Rye Pump bread. I use that all the time. Stuff is amazing. Now I want a reuben.
We did the chimichangas last night and they turned out amazing! I forgot to take pics but I'm making another one for lunch today so I'll take one then.
For the dish I posted above, the boneless thighs is actually Korean kalbi sauce that we scored from H-Mart. The shrimp is just a bit of salt and diced garlic.
Very tasty but really easy to prep. The chicken, we prepped at midday and just let it sit in the kalbi marinade until 5ish when we were prepping supper. Flied lice is well, so basic...some frozen peas, canned corn, and diced up Chinese sausage. That's short-grain brown rice for some nutrition.
For bun, the wife has this soy, lemongrass marinade that she makes that she got from her Mom. Similar prep cycle though...just make sure there's rice vermicelli, mixed green salad (no dressing of course), and given my love of seafood, virtually the same grilled shrimp. We use a vegetarian fish sauce because it's healthier and frankly, I find it less pungent anyways but tastes just as good. If we aren't lazy, we also will toss in some pre-pickled julienne carrots pickled overnight in sugar and vinegar. It's pretty healthy overall and cheap meal to make. And tasty.

I mean, FWIW, it is pretty close to the real thing...just not as pungent but even my wife, growing up with fish sauce on everything (like hummus in Zohan ) said it works fine. So good enough for a Nammer chick, good enough for moi.
We already had our meals planned for Tuesday and Wednesday since it was my wife's bday, so we celebrated Cinco De Mayo and Taco Tuesday on Thursday. I made fresh Guacamole for the first time, it was a lot of work but it came out amazing. I used 5 large Avocados from Sam's Club.
I also added chopped tomatoes, red onion, lime juice and garlic, wish I had fresh cilantro, but I made due without it
The end result, came out very tasty
I had some smoked pulled pork in the freezer, and we've been eating a lot of beef lately, so I decided to thaw the pork out and make it into some Carnitas with some taco/fajita seasoning, lime juice and some beef broth.
And here's the final result, these were so good we decided to do them again for dinner tonight

And per my post here, this is pretty much what we had today a la some spring rolls too...so, per how bun are classified, it's a 3-color (3 "toppings" a la shrimp, chicken, and spring rolls) bun...
And hai, @thoiboi , the fish sauce we used was vegetarian.
So been making some pulled pork quesadillas this week with pork I had frozen. Girlfriend isn't much of a vegetable fan so hers has just been pork, bbq sauce, and cheese. Been doing mine with cooked peppers and onions as well.
We made lasagna this weekend. I made my meat sauce (ground turkey & hot italian sausage).
Then we made our own noodles. We've never made them before, but it was really easy, just time consuming.

It had ricotta, mozzarella, and parm in it, and it was delicious. We ran out of mozzarella for the top though I was too hungry to remember to get a good cross section shot too.
