Went back to food today...braised pork belly with picked daikon/carrots a la raw cucumber, cilantro, and green onions in a Chinese steamed bun (mantou) "taco". Oh, spicy Japanese mayo too.

It's a slightly amended recipe to the link above. So, the differences are pretty obvious:
  • No greasing/brushing with additional butter.
  • No baking; it's meant to be steamed -- so to facilitate this, shape each bun individually and on individual pieces of parchment paper.
  • It is important that the buns are individualized and obviously, rolled out a bit since you want them flat.
Voila: Mantou "wrappers".
  • Steam for about 7-8 minutes

Thanks, dude.

I think partly genetics BUT...I also think given my age, it's alot to do with how I try to balance things out. For example, I workout almost daily and secondly, if I eat some carbs for one meal, the one before or after will be sure not to have any. I also generally don't eat as much meat (even though I love it) -- most of my lunches with the odd exception are raw veggies and fruit.

I'm pretty sure if I did not follow the above, I'd be a fat@$$.

pork belly buns like that are one of my faves Ironically, one of the best ones I've had was at a Taiwanese place in Atlanta, GA of all places

So, we had some left-over pork flavor broth from prepping the braised pork belly dinner we had in #2085. We took that to create the soup base and a very easy ramen supper tonight...

Decided to go for food tonight...Made chicken tikka masala in the dutch oven and also roasted some cauliflower with paprika.

The wife made some naan bread too to go with the stew.

Taco Tsunday!



Turkey tacos with my homemade seasoning, cheese, tomato, avocado, tomatillo salsa, and hot sauce on white and yellow corn tortillas. With a side of Adobe pepper black beans and crispy roasted potatoes.

We still had a ton of ham left over (frozen) from Easter, so we slow cooked soup with it. Cannelini beans, onion, garlic, ham bone, cubed ham, bay leaf, chicken broth and water. Some extra red chilli flakes, paprika, salt and pepper...noms. Casey made some garlic cheese beer bread too. It was delicious. And incredibly filling. I sprinkled some parm onto it, because cheese.

Shit photo, but the food was tasty.

One of the wife's favorite things that I make is tuna cakes, since I can't eat shelfish this is a nice alternative for us. I like to use the Sunkist Garlic and Herb flavored tuna



I also make my own homemade tartar with fresh dill



Pan fry and serve.

Lap cheong ( sausage) diced up and of course, daikon.

Radish cake is a dimsum staple and worth trying if you ever get to down the road, sir. But, easy to make too if you want to try.

During one of my first trips in March to Sam's club, I happened to grab some corned beef briskets. Had been waiting to do something with them, so I cooked one in the crockpot with some of my homemade Simcoe IPA and made reubens out of them.



Cooked before removing fat cap



Had the wife grab a loaf of rye bread and thousand island on one of her grocery store runs



Damn they were good!

OMG, that looks amazing...

Going to try making chimichangas for dinner tonight. Made the shredded chicken last night along with some guac. All I need to do today is make the pico this afternoon, assemble, then flash fry before dinner.

I've been trying to do a brisket lately but Costco is out of briskets every time I go.
