I hope those aren't soap plant leaves on that sammich .... .
( .... kind of. Looks great. About 10% of people have a 'special' mutation that makes Cilantro taste like soap. I'm one of god's 'special' people.)
Yes, Herr Mod...cilantro kinda is often a garnish for Vietnamese sammiches. Good to know...we'd serve a version of the banh mi to you without cilantro then.
Don't pass up the pickled radish and carrots though. They are, IMO, a necessity in the sandwich.
This weekend we took it pretty easy. Saturday night we defrosted some pulled pork and made some tacos. We had fresh tomato's, avocado, onions, roasted red peppers, and cheese, served on white corn tortillas. They were delicious.
Sunday was some of the same pulled pork on baked potatoes, with some roasted brocolli. Also delicious, but no photos, unfortunately.
Tonight we grilled some cauliflower, onions, romaine hearts, and some jalapeño and cheddar sausages.
Now we're trying to decide if we want to make some brownies
Earlier last week I made pineapple fried rise with peppers, onions, tomatoes, water chestnuts, and chicken.
Then Friday night I made ginger steak stir fry. Girlfriend ended up not liking it so Saturday for lunch I made myself and omelet with the leftovers. Man what a great omelet filling.
Forgot to snag a pic but we made Japanese-style hot dogs yesterday...which is not that exotic despite the name...
So, same 2 primary ingredients of a nice smokey/Bratwurst and bun...but, instead of ketchup and mustard, we did a spicy mayo (using Sriracha), shredded ready-to-eat dried seaweed, bonito flakes, and some tonkotsu sauce. Voila...the famed "Japa dog" that is pretty popular in Vancity.
Twinsies! I made some turkey burgers (I can't eat beef) last night as well. Hot & Sweet pickles, provolone, spicy hummus, avocado, lettuce and sriracha on a lightly toasted potato bun. I made some roasted cauliflower, broccoli and potatoes as a side too
We had 4 buns left and half a pack of bacon that needed used up, so I decided to make grilled chicken sandwiches with bacon. I also made my own Chick Fil-A sauce using this recipe
I thawed out 4 chicken breasts from the freezer, pounded them flat with a mallet and then marinated them in Italian dressing, the I grilled them up. I cooked the bacon in the oven so that I didn't have to babysit a frying pan while grilling.
Added some provolone, tomato, onion and pickles, with the homemade sauce. They were amazing!
I made these a week or two ago. Tried to get the kids involved..they tapped out early. A lot of work but hot damn they were tasty as hell. Easy to freeze and cook later, too!
Using up some more leftover pork last night for dinner. Cooked up some red skin potatoes, green peppers, jalapenos, and onions. Covered with pork and a little BBQ sauce for a good meal.
We've been doing a lot of freezer (instant pot) meals the past few days because my fridge is no longer holding temp It's not even three years old, but apparently LG fridges don't last very long. It's under warranty, but they can't get here until the 29th, and I can't get a fridge locally since they're all sold out due to the pandemic At least the freezer is holding...
So was at the grocery store the other day and they had filet mignon on sale. We everything going up in price something being on sale for once was actually nice so decided to get two 12oz filets. I couldn't decide how I wanted to cook them. Most of the time I usually only cook steak on the egg anymore. I wanted to try something different though to get more a steakhouse cook on the filet. So decided to bust out the cast iron. So I bacon wrapped the filets while they sat out for about 45min before cooking. I made some onions to top the steaks with, red skin potatoes, and corn on the cob.
Money shot
Three min each side before putting in the oven for 8min at 400 degrees. The recipe I loosely used for doing the steaks called for 1TBSP EVO and 1TBSP unsalted butter. I feel like there was too much liquid in the bottom of the pan to get a super firm crust though which would be my only complaint about how the steak turned out. Other than also missing the charcoal/smoke flavor you get on the meat from the egg. I think next time I might try 5min one side then 3min on the other side that it will sit on in the oven and only do 6min in the oven. Need more crispy crust for my liking. Other option might be to get a cast iron plate for the egg and do it in the oven first and then have the cast iron in the egg at like 600 degrees for the final sear.

Steaks look awesome! I'm also considering getting a cast iron plate for my grill so I can get it ripping hot without smoking myself out of the house.
FWIW, I'd forego the EVO and go with straight butter if you want a crunchy crust. The EVO won't brown in the same way the butter will and will probably give you a bit of a burnt taste.

Good to know I will just go with 2TBSP of butter next time and no EVO. Forgot I also put 6 cloves of garlic in with the steak as well.
Yep. Well it does at temps where you're searing at least. I think the smoke point of EVO is like 300F or something like that. That's why it's great for pasta but not so great for steak. Canola oil works much better but butter is best.
Not the prettiest plate, but it's our first home cooked meal in over a week since we managed to find a fridge and go food shopping. Pan seared pork chops with roasted sweet potato, tomatoes (and garlic), and cauliflower and fresh baked bread.
Father's Day dinner for moi...and it's been since, like, mid-March since I had sushi...so, that was my ask. We picked up some nigiri and maki from a regular spot that also just recently re-opened. Washed down the yummy sushi with some Asahi. Wife made this amazing black sesame sponge cake too.
