GF requested steak dinner for V-Day, so I grilled up some strip steaks, perfection

Thanks man, I've been with my gf for like 9 months and had never cooked her steak. Definitely was time, plus it was actually warm yesterday so I didn't mind being outside grilling

Thanks man, I thought about grilling them, but I actually baked them. I poked holes with a fork, coated them with olive oil, then hand ground sea salt and black pepper on the outside. They came out great!

My trick for potatoes has been to poke holes in them and then microwave them on high for 5-7 minutes each depending on the size of the potato. Then 15-20min on the grill which means they take about the same time or a little more than steaks normally. I will normally do about 15min on the grill on the same medium temp I am cooking my steak. Then when I take the steaks off and put them under tinfoil for 5min to sit before serving I crank the grill to high to make the skin nice and crispy.

So last night I made some excellent sandwiches. I guess I would call them more of a panini since they were hot. They consisted of sliced chicken breast, 3 pepper jack cheese, honey mustard, sauteed onions, fresh jalapenoes, and 4 slices of bacon cook in my cast iron pan of course. I also use bacon grease instead of butter on the bread when I cooked them in the pan. The layers were as followed. Bread, honey mustard, sliced chicke, cheese, jalapenoes, onions, bacon, cheese, honey mustard, bread. I use cheese in two sperate layers to try and help hold everything together. I forgot to take picures of the first few layers but here is the most important parts. The chicken was just sliced deli counter chicken breast.

Last night I made buffalo chicken rolls, they came out really good!
I used up the rest of my chicken tenderloins and smashed them down with a mallet, then marinated them in buffalo sauce

Then I rolled them up with crumbled blue cheese in the middle

And the finished product, I let them bake an extra 5 minutes to try and brown them, and next time I probably won't, but they still came out really great!

So this past weekend Megan and I went to the a restaurant we had never been to in Charlotte called the Cajun Queen. I wish we had gone sooner. The food was excellent. I had cajun season pan seared duck, with crawfish etouffee, garlic fried potatoes, and mixed vegatables. Sadly it was a special so hopefully it is one they will have again sometime when we go.

Over the past few years duck has become one of my favorite meals. Now if only I could find a good place to get some so I could try my hand at making it myself.

Same here man, I've wanted to smoke duck for quite a while. One of my fav local restaurants makes amazing duck, I had this a while back with pumpkin ravioli, spinach and spaghetti squash

Decided I needed to look into this more haha. I really want to make some duck. Preferably buying some bone in or boneless duck breasts and not the entire duck.
Buy Duck Breasts - Maple Leaf Farms
Buy Duck: Fresh Breasts, Muscovy, Pekin, Magret Shop D'Artagnan
The first place I can apparetly get from Publix or Lowe's Food. I don't know if you have either of them in your area. It appears Giant Eagle carries the first companies stuff. Don't know if they carry their duck or just other stuff. I am definitely going to have to go look this weekend.
Doesn't seem the cheapest stuff but the second place even has duck bacon
They also sell several different types of duck as well.

I've seen duck at Whole Foods, don't think I ever looked at GE.... Lamb is my favorite meat, and I rocked a leg of lamb and 2 racks of lamb in the smoker the day after Christmas

Thursday I made Corned Beef and Cabbage with my homebrewed Irish Red Ale, I sat the brisket on top of chopped red onions and garlic cloves

Let it cook for 7 hours on low, then threw in the cabbage

While the cabbage was cooking, I poured myself a homebrewed Irish Red

The end result, this was after we ate and I trimmed all the fat off, I was so hungry I didn't take a finished product photo lol

I had so much leftover cabbage, that I decided to make another Corned Beef brisket, so I bought another one and made it on Saturday, cooked it with more homemade Irish Red

Made Beef Stroganoff last week, had 2 lbs of grass fed stew meat that I needed to use up, so I made this in the crockpot
I cut up garlic cloves, baby bellas and a red onion

The finished product, served over multigrain egg noodles, it was really good, have never made it before, the gf was very impressed
