Tonight I made fresh jumbo sea scallops. Pan seared with nothing but their own brine juice for flavor. drizzled a little melted garlic butter at the very end.

And wrapped them in bacon...yes bacon...

All made mushrooms sauteed in garlic butter

as well as steamed fresh green beans...with....some garlic butter.

been cooking A LOT more lately which has been great.

tonight:

NY Strip - brought out an hour before cooking to come up to room temp...rubbed with salt. Before cooking salt was wiped off and steak was patted dry...rubbed in some pepper.

Sweet Potato Gnocchi - found this at whole foods, had to try it, pretty decent. I want to find a sauce to compliment the flavor. I think normal marinara wouldnt be right. I ate the stuff by itself tonight.

Fresh Steamed Broccoli.

Thats all.

Made some dinner (w/pics)

Grabbed some beef and potatoes.

Marinated the beef with onions, bbq sauce, ranch dressing, bunch of seasoning.

Layer of potatoes and meat on top with onions on the meat, in the oven at 350 until meat is where you like it. Turned out pretty good

Also fried some seasoned fries

Sorry....no pics again.

I made smothered pork chops.

You will need 4 medium to large pork chops. I used 2 and kept the recipe the same. I would explain why later.

Mix the following:
  • 1/4 cup of honey. Heat honey so it is easier to work with.
  • 1/4 cup of soy sauce.
  • 1/3 cup of chicken stock.
  • 1/2 teaspoon of ginger.
  • 2 table spoon of ketchup.
  • 1/2 table spoon of garlic salt.
Brown the pork chops in a skillet. I used a touch of olive oil to coat the pan, and I also used some salt and pepper on the pork chop for seasoning.

After the pork chop is browned pour the mixture made earlier on the chops and bake at 350 F for 30 minutes, or until they are done. You can leave it in the skillet if it is oven ready. i just used a baking dish.

I only made 2 pork chops but the recipe was for 4. After the chops were done cooking, I covered them in some foil and I placed the rest of the sauce in a small skillet and reduced it until it was thick as honey. I poured a little on the pork chop to serve.

I liked this recipe a lot. I will definitely use it again. It's tough to find pork recipes that does not require a long time to marinate.

I marinated some beef a few nights ago in Jack Daniels BBQ sauce w/ a hint of vinegar and wine, it was spectacular. Try it sometime

vinegar and wine are key ingredients to marinate meat They keep the meat tender.

often my friday night ritual involves Chinese and a bottle of rum at a friends shop....lately Ive come to realize that I cant be doing this anymore, the hangover just aint worth it.
