Well, it will actually sync the game's time of day at a track with the actual current local time at that track. Seems like a small thing but I think it's pretty damn cool. Especially you're participating with group that's somewhat spread out across the globe.

Polyphony Digital have conveniently published their own independent and specific confirmation of the features we’ve been learning about via media outlets over the past two days, thanks to one big update to their official site. In addition to what was already discussed here and here, this is what’s new:
* As confirmed in a footnote on the Japanese site, the 800 “standard cars” in the game will not have interior view or high-beam headlights (new video standard cars here, thanks Paskowitz).
* NASCAR pit crew’s actions have been specifically re-created.
* All cars will be able to “roll over” if involved in an accident.
* Damage may “not necessarily be applied to all races in the game”.
* You will be able to define your own password-protected online races with your friends, and you’ll be able to control all of the event’s regulations.
* “You can host ‘Track Days’, where everyone can drive freely on the track. You can try to shave down your laptimes, you can teach someone how to drive, or just enjoy drifting.”
Vehicular damage was also clarified:
Physics-Affecting Damage
This is damage in which the physics simulation is affected by alignment deviations, etc. This is damage that affects controllability, and the car may not drive straight, or it might become unstable in corners, etc. depending on the amount of damage. Affects all cars.
Dirt, Scratches, and Dents
This is damage that can be visually seen, and involves dirtying of the body, scratches and dents. Affects all cars.
Separation (dislocation) of Body Panels
This is damage in which body panels are dislocated from their original positions, or deform. Affects only premium cars.

We’re making Honda HSV now but may not be in time for GT5.
CR-Z will be in GT5 and performance is accurately recreated.
The CR-Z is a car that is really interesting once you tune it. And I’m considering buying one myself just to tune it.
Might be fun to add a turbo or something like that.
Because you can make a really fast car if you take off from low speed off of electric motor then have turbo take over on top.
Game will simulate hybrid braking on CR-Z.
The final number of tracks hasn’t been fixed yet.
The VTEC sound had been reproduced ever since GT1, it switches at proper range according to cam profile.
There might be something from LMS or ALMS could be added.
I don’t think Bernie Ecclestone won’t allow F1.
Regarding interior view…do you mean you would want a black frame interior view?
Can’t talk about details on customization but yes, you’ll be able to customize.
Customization in GT5 will be better than GT4.
Most of the Civis from the 90’s and on should make it into the game.
I drove the Honda CR-Z on the Honda test course in Japan and it handles really well.
If you go into a corner with good amount of load on the front tires the rear slides at a very controllable rate.
Technically it is possible to have bikes in the game but haven’t really thought about it yet.
Regarding weather effects…rain, etc… Maybe.
There will be a lot of cool lounge and jazz music in the game.
Unique music for ea manufactuer would be something cool to do.

* The game has nearly filled all of the space available on Blu-Ray disc.
* You’ll have the option to synchronize the game’s time of day with the track’s current local time.
* The crowds will be dynamic, so there will be more tents, cars, and motorhomes at longer races.
* Yamauchi admits his team may have “actually gone too far in modeling some of this detail” and suggested it might be “more suited to the next generation of PlayStation.”
* Both high and low-beam headlights will be included, so you can flash slower cars as you’re about to pass them (how awesome will this be during the 24 hour races!?!). All lights will illuminate dirt, smoke, or other debris in the air.
* NASCAR insisted that all of their series’ cars be playable on all circuits in the game.
* It was previously mentioned that only 9 NASCAR cars will be included, but this was incorrect. There are simply 9 cars in the E3 2010 demo, but “many more” are coming.
* With the exception of profanity, all of the Nurburgring’s graffiti has been re-created, just as it is in real life. According to Kotaku, they will attempt to keep the graffiti up-to-date before the game is shipped.
* Players will be able to maintain an online profile to share and watch friend’s progress and statistics.

Unfortunately, despite all of these details, there is still much confusion regarding the status of interior views on the 800+ “standard” car models in the game. Kotaku provides the most optimistic description:
The developers have created fully modeled interiors for the Premium cars, as well as doing detailed modeling for the car’s undercarriage and even the exhaust pipes! The Standard cars apparently won’t have the exact interior modeling. For example, an Enzo’s interior will look like the real deal, but your typical Mustang’s will look like exactly like Mustang’s.

Based on that update, it looks like it could take another 5 years to finish this game. Okay, so I admire his attention to detail, but if he's going to delay the game so he can keep updating the graffiti at the Ring...
