360: Forza 4
I think the model really does depend on the car, both gt and forza vary quite a bit in quality (even if you exclude the standard models).
I actually despite the gt5 braking. I have spent plenty of time bombing down dirt roads in cars with no abs and no tread left on the tires. Gt5 always felt like the brakes only had about 3 settings even when I turned the pressure to 0 or 1 using the mandatory off road tires. Then again. I really hate my sixaxis.

2) the game menu playability. for instance, if you go into an event and your car is overpowered, it will ask you whether you want to set your car to the required power levels. all you have to do is hit one button to do so. wow, that's nice and sure beats having to back out and go into the upgrade options and fine-tune your car to the specs by hand. This feels like the "2.0" version of next-gen racing should be. i.e. things should fall into place like this, you shouldn't have to do that kind of thing manually anymore.
you can even buy parts if your car isn't good enough or don't have the right tires...
oh wait, I don't think I explained it well. In Forza 4, you don't have to do any manual tuning yourself to get your car up to spec for a race because it doesn't match the requirements. It asks you whether you want the specs adjusted, and then you can hit OK and then it shows you what the changes are and how much it costs (if any) and if you want to do it, you hit OK again. And that's all, you don't have to even look at any parts or anything.

Part of the fun for me in these racing games is tuning the car and fiddling with settings.
also, as I mentioned earlier, this has much to do with personal preference. (not 'right' or 'wrong')

I don't know exactly how forza's replay sharing works, but if people can send them to me I can record them through a capture card instead of doing the whole tripod in front of tv thing.
