So, what makes that tray of meat "wait all morning" worthy?
Is it just a self perpetuating knobslob of people that wait on line and then justify it by saying it's sooooo good that you need to wait so people wait and the whole process just snowballs? Or is there *really* something that great about it?
I genuinely don't get it.
EDIT: Or is it just *good* but it's supply and demand. Low production == high cost (of time waiting).

I looked and saw the cook guy is a Beard winner. Which I guess counts for something in cooking circles... But it's smoked meat!
So mostly hype then? Not to discredit his product, and that's fair enough reason for some people to be down with it, but I guess I'm safe not putting this one on my bucket list then?
Phil's is always a wait too... i'm hoping we won't have to wait that long this weekend..

but it's the gf's friend's bday and phil's has become the 'de facto "BEST BBQ"' place in socal according to Yelp, instagram, facebook, and snapchat... so we have to go back..

In my limited experience with good BBQ...
Smoked meat doesn't differ all that much from place to place. It's the portion sizes and price point that draw people in.
I have a hard time believing that food wise, one smokehouse is a 10, while another is a 5, unless there's some seriously questionable stuff happening. If anything, it's the difference of being a 9 or a 10, with again, price point and portions that make the difference.
One thing that does vary is the BBQ sauce. Making a good slaw, cornbread, fries, etc, isn't rocket science though.

I agree. But are you willing to stand in line for 4 hours because of different wood chips? Quality of meat and smoke time is definitely important.
It's funny you say that.. I've heard their sales have gone down a bit because of this move. Everyone associates mcdonalds with shit. Ain't nobody want quality from McDonald's

People weren't buying into the better product and increased prices for the better product. I wonder if that has turned around since.

He fucking has his own TV show now and has cameos in movies.. Aaron Franklin started a BBQ renaissance. He's not a pioneer, he's just methodical about his craft meats. He always picks the best beef and uses the science of the smoke to create some seriously delicious smoked meats brah.
Regular BBQ connoisseurs will argue whether it's worth the wait.. If you just want your fill of good BBQ.. no it's not. If you want to experience the peak of TX BBQ, and if years of eating burnt ends haven't killed all your tastebuds in your mouth yet, then it's at least worth waiting in line once.
People wait in line, because he only cooks a certain amount of meat to ensure quality day in and day out. At the end of the day, no meat, no eat. People want to get in on that. Now if you go to Black's.. they'll fucking laugh you out of town if you ask them if they have meat. They always have meat. Is it as quality as Franklin's.. debatable, but they've been doing it for over 100 years like others fine BBQ joints around central TX.
I think several craft meat joints like Franklin's only do a certain quantity a day and run out, but Franklin's has the buzz brah! Get in line fool!
Franklin's is indeed good, but not my fav, and not worth the wait IMO. If you've never truly eaten good TX BBQ and you're a hipster douche or connie chung.. it's worth the wait. I like small town charm BBQ joints.. the beef might be a little chewier, but you fucking feel country AF, not douchey AF.

Made it in the slow cooker on Sunday but made enough for an army. Also I should say saag chicken because mostly chicken, but it has paneer in it. Whatev, still delicious.

Heard it on the financial news brief awhile back on the radio <img alt="" src="images/smilies/shrug.gif" title="Shrug" /> said sales slipped a bit after they had the new and improved menu out for awhile. People weren't buying into the better product and increased prices for the better product. I wonder if that has turned around since.
