Growing up in South Florida I'll gladly admit I probably have never had seriously good bbq like what you showed and describe.

I also will admit that I'm more about the sauce than anything else...i slather so much on it that it probably doesn't matter that much what kinda quality it is. Although if it were super awesome without it, I'd limit it.

I love a little bite...I love sweet and I love vinegar.
