Interlagos Blue is a stunning color. I remember seeing it on the E60 M5 when it first came out and it looked pretty nice. You gotta do what you can to help the recession.

Personally, I don't like beige on sporty cars. Harder to mod, match, get's dirty easier, etc. But it's up to you. I would go black if it was me, it will be easier to sell down the road as well (unless you are leasing).

Black. Less worries about jeans and other leathers bleeding or transferring color on to it.

It does happen, and dirt also shows up on the bolsters and other weird areas. If you maintain the car (and I know you will), you won't have too much too worry about. And yep, we have different tastes! I would definitely do tan on a luxury type of sedan, but not on a sports car. I did like it however on your NSX. Red+tan is a very classic/Ferrari-esque look. Not sure about Blue and tan though. You are also going to be in the minority for this combination. I guaruntee you that a vast majority of ppl will pick black over tan if you do a poll. This will definitely impact your resale.

Its funny, many people said the same thing when i wanted Monaco blue on Saddle brown with my 335i. Yet after getting it and taking many pictures.. many others started to order the same combo. You can even see the threads where they said "thanks to crazy bimmer..." Which is also didnt hurt the resale at all when i sold it. Many were interested in the car.
I dont worry about resale as I want to get the car the way i want, not for someone else.
I am more concern if the colors go well together as im not design expert.

How many Ferrari's are blue. 10 out of 200? LOL! Man, I hate posting my opinion when ppl already have made a decsion. I do the same thing though. Btw, I liked the saddle, it was a nice darker richer color then the tan.
Blue on Tan is very ferrari-like also.

I always wanted a red exteior beige interior car. So when I bought the CL, that's what I got. Not many people like the parchment interior, but I love it. It's not as bad as I thought it would be with regards to getting dirty.
Tan/beige/Parchment looks great in red, blue and black cars IMHO, but a black interior is almost as nice.
I think the Blue/Bamboo would make a great combo... just not for me since I've had a tan interior for the past 6 years.
