What changes should be done to a new to me used engine?

Dealing with a used Honda engine j35a6

I've purchased a water pump kit, serpentine belt, new ngk sparkplugs , and pcv valve

Should I worry about valve cover gaskets and should I or shouldn't I do a valve adjustment while I'm at it? or anything further for that matter such as head gasket and or rear main seal?

I mean since it's already off why not do all of the seals? RMS, head gasket, cam and crank seals. re-seal the oil pan

do all the seals that you can including the oil filter housing, RMS, valve covers, etc.

I fourth the above recommendation PLUS...I see you state WP kit, you mean TB kit? If not then I would do the TB and check all the pulleys.

Thinking bigger pic, I would also check your mounts, if you gotta pull motor easy swap of mounts depending on your mileage

All of the above, plus if you ever plan on doing HFPCs or PCDs this would be the ideal time. Or even if you need to/want to replace the O2 sensors on stock precats. Big +1 on motor mounts.. Especially that rear mount.

Would be a good time to paint valve covers and intake manifold too if it's all gonna be off to adjust valves, if that's something you're intersted in.

Me personally, I would only do the cam and crank seals if and only if they are leaking. I would however do the rear main seal, cam cover cap seals, valve cover gaskets, oil pump reseal, and oil pan reseal.

A lot of folks say that, dealership service departments included; that said, many of us have experienced oil leaks from the cam and crank seals somewhere around the 150,000 mile mark; including both of my J-Series engines.

Said another way, do the seals now while the engine is out of a car.
