My fav thing about Louisiana is that it is considered simply mandatory to feed people large amounts of incredibly spicy and delicious food.

My 1st business trip to Lafayette, early 2014: I'm in a small machine shop out in the boonies, training some guys on a new machine. Everyone is super friendly and we get into it. By mid-morning I am watching while my students do some hands-on lessons - one is softly cursing in their French/Cajun dialect, he eventually became really good at the machine. The plant manager comes up and starts talking to me and soon finds out I'm a Yankee who has never had Cajun food. He is astounded and tells me to stay right there, and jogs out the side door. I just go back to guiding my guys through the lesson, until a minute later some guys come looking for the plant manager. I tell them he went out that door, which leads to the parking lot, and they run out to find his truck is gone. Now they are agitated because they need him for something and give me some funny looks. But 10 minutes later the plant manager comes bustling in through the side door with a big styrofoam to-go container in a bag. He comes up and hands it to me, saying "Ah went to th' Chev-hrawhnn!" in his thickest Cajun drawl. Turns out a few miles deeper into the boonies there's a local joint behind a Chevron gas station that does Cajun food - from butcher to plate. So it's 10:30 am and I am stuffing my face with this amazeballs deeply rich and spicy Boudin - holy crap it was good. In fact I have yet to find Boudin that equals it.
So I finish the Boudin, licking my lips and feeling my weak-ass Yankee stomach begin to process the heat, and start to get my students organized for the next lesson - when over the loudspeaker comes the sweet voice of the front office lady: "Rice 'n beans are here," and all my students take off. "Come on!" they tell me. I follow them to the grubby little break room where stacks of very familiar styrofoam containers are being handed out - each one loaded to the brim with amazeballs deeply rich and spicy red beans and rice from the same damn Chev-hrawwhnn. I ate the whole thing, and suffered (gladly) stomach pain for the rest of the day.
