I've been on a quasi-cooking tear lately.

Monday...baby back ribs with sliced/peeled apples and Corky's apple bbq sauce cooked most of the day in a slow cooker....it was heavenly

Tuesday...seasoned and grilled up some skirt steak. Then, took some wheat dough and threw that on the grill to give a semi cook. THEN, took the dough...added a little marinara, cut up skirt steak, and loads of mozarella and baked it into an awesome crunchy pizza....grilling the crust = amazing

Tonight - corned beef and potatoes in the slow cooker since 10AM.

Dessert....took some strawberries we had in the fridge...broke them down in small sauce pot with some sugar...added a little cocoa...and poured it over some hagen daaz vanilla ice cream

Plank-grilled salmon recipe per request. This entree is about as easy as it gets.

Ingredients:

1) Cedar planks
2) Salmon fillets
3) William-Sonoma Potlatch seasoning

Get the planks anywhere that sells 'em. World Market and Costco (seasonal) both have them.

Salmon: I get mine at Costco. I use the Atlantic salmon, and always go for the smaller packages because they taste better.

Prep:

Soak the planks in water for 2 - 3 hours.

Sprinkle the potlatch seasoning on the salmon and hand rub it gently onto both sides.

Put salmon on planks.

Cooking:

Grill on medium heat (what you'd cook chicken at) for 15-20 minutes.

Serve and enjoy!

course ground italian sausage stuffed into portabello mushrooms cooked on the grill.

sweet potato gnocchi with a apricot chipotle sauce.

I wasn't too fond of the shrooms...but I think I put too much meat in them. Also didn't love the taste of the sausage itself. I have ideas on how to tweak this for another try.

Tonight.

I took six pieces of apple honey cured bacon, thickly cut and took one and half those pieces and cut them up small, set them to the side.

Cooked up the rest of the bacon in a pan. Put the bacon off to the....took some french cut lamb chops (seasoned with salt and pepper) and seared them off in the leftover bacon grease. Let them cook on each side for about 2 minutes...basting them. Put them in a separate pan and let them finish in the oven.

Then, I took some fresh green beans and put them in the bacon grease along with the chopped up bacon I initially set aside.

served it all with some brown rice.
