I made a simple Chinese "white cut" style of chicken last night.

I wish I could have threw them on the grill, I think they would have came out even better.
So here is what I use:
1) Black pepper
2) Cayenne pepper
3) Turmeric
4) Paprika
5) Canola oil
6) Lime juice (I prefer freshly squeezed)
7) Saffron oil (saffron is stupid expensive and I couldn't find the oil. So I just bought the saffron at a local supermarket and made the oil from that)
8) Salt (almost everyone uses salt, but I'm not a big salt guy so I skip out on it)
9) Nonfat greek yogurt

So first meal using the leftover brisket last night I made some brisket grilled cheese sandwiches. Nothing crazy. Just cheddar and monteray jack cheese mixed together and some shredded oven reheated brisket and a small drizzle of bbq sauce. Man were they good. The brisket reheated much better than expected as well. Put it on a foil wrapped baking sheet and then sprtized it with some apple juice losely covered with another piece of foil. Then in the over at 325 for about 20min.

Well, this thread doesn't get much love so figured I'd throw something in here. I have a pretty bad shellfish allergy but I grew up eating crab and shrimp so I do miss it from time to time. One thing I really miss is crab cakes, so I made tuna cakes for the first time. I used the garlic and herb flavored tuna packs which are my favorite and also let the mixture sit overnight to blend the flavors together. Then I cooked them on a hot skillet and flattened them into patties
My pan wasn't hot enough on the first try so they did stick a bit, but they still came out great
I also made a homemade tarter sauce which came out fantastic. It had a strong dill taste because I used fresh dill along with dill relish, however it complimented the tuna cake flavor and paired with it perfectly. The GF was impressed with how well I blended the flavors together. She said this will be one of her most requested dishes going forward lol

Single digits and negative windchills means it's the perfect time to make some chili, my buddy had given me some ground venison cut with beef in order to be ground, so I used 2 lbs of it for the chili
Browned the meat and then loaded everything into the Crock-Pot before work
Finished product came out great! So good and just the right spice level

So we started back ordering one to two boxes a month from the meal services we had been using last year when focusing on watching what we eat. We basically have used it as a good way to come up with new recipes to try and not have to go to the grocery store each time to try them out for the first time. This latest order I chose a chilli which I have been meaning to make anyways. Not really difficult to make but most in the past have been in the chrocpot but this one all made in one pot on the stove. Turned out excellent. I would probably add more types of peppers in it next time cause I like chilli with lots of veggies in it. Overall was very good. Wasn't supper spicey though so might even dice up a habanero next time as one large jalapeno wasn't enough for me heat wise.

So after making chili as one of my meal kit meals it got me interested in making some more on my own finally. I literally made this one my own. Read a few recipes but didn't go off any of them. Made it all in one pot on the stove to make it simple. I like spicy things so I put two jalapenos and two orange habaneros in it with the seeds to add flavor while cooking. I didn't add any actually spicy seasonings and it has a nice kick but not overbearing.

Been a while since I made some paninis. Asked Megan what she wanted for dinner the other night and that is what she said. They are not super inovled. Four slices of deli meet (typically use some type of seasoned turkey; this time was cracked pepper mill turkey). Alternate normally between horshradish cheddar cheese or 3 pepper pepper jack (used the horshradish this time). I carmalize onions to put some veggies in them. I also put fresh jalapeno slices in mine as well. Lastly for this recipe I used a 3 pepper mayo spread from Boarshead on the pumpernickel rye bread.

Had been craving some baked oatmeal from local farmers market back home. Theirs is almost like a dessert more than a breakfast in how sweet and cake like it is. So this came out nothing like it since I used large rolled oats. It did turn out really good though still.
