Bacon wrapped eggs
Some of you have seen my bacon explosion. Another recipe that included bacon caught my eye, bacon wrapped eggs. I took a look at how easy it was to make and I decided to give it a try and changed one little thing.
Need:
cupcake pan
bacon
eggs
cheese
salt/pepper & any other spices you want
oven
appetite
Only thing I changed was I put some Russian bologna on the bottom. The recipe actually says to put some more bacon on the bottom of the cupcake insert.
I put in the bologna
Put in bacon
Put the eggs in:
Add salt/pepper/any other spices at this time
Add cheese of your choice:
Bake in the oven at 400 degrees for 15 minutes and you're done!
Making them for breakfast tomorrow morning.
ENJOY!

You do pre-cook the bacon first. I did it in the microwave. The baloney can be eaten w/out cooking, so I just put it in the pan and it cooked with the egg in the oven.
No pre-cooked microwave bacon in this household.
Yes, you pre-cook the bacon before inserting it into the mold, you just have to make sure it's not crispy.

Picked up a pound of deli bacon and a carton of eggs last night. Ready for the weekend
If you think about it, consuming 3 of these is consuming 3 pieces of bacon, 3 pieces of bologna(pretty small) and 3 eggs. Pretty typical breakfast. You can skip the bologna and just line the bottom with more bacon.

Made them with the bacon bottom. Cooked my bacon til the verge of crispy and wrapped the muffin tin while they were hot so I had crispy bacon lining the sides.
Great idea, I think some biscuits on the side tomake them mini breakfast sandwiches is the next foray.

alright so i went ahead and made these sunday morning. did things a little differently, and it turned out great. was a big hit at our football pre-game party.
i used sausage patties, bacon, eggs, shredded cheddar cheese.
flat pan for the bacon and round pan for the sausage
sausage in place
then i wrapped the outer layer with bacon, and did 6 of them scrambled and the other 6 regular.
garnish with cheese
bake at 400degrees for 15 minutes and you're done.
^i know mine aren't as pretty as the OP's...but they tasted damn good.
