Had some fresh parsley that I didn't want to waste, so I threw together a homemade Chimichurri which is one of my favorite sauces.
I got some free steaks from Snake River Farms, so decided to grill up them up for dinner
They were near impossible to thaw because they were frozen so solid, threw some steak rub on them.
The middles were still a bit frozen so they aren't my prettiest steaks, but the flavor was great
And the chimichurri was fantastic

I've been trying to be very deliberate with our dinners over the last 2 weeks while I try to slim down (down ~19lbs since May).
Pork tenderloin with brussel sprouts and brown rice:
Sheetpan panko breaded baked salmon with veggies (served over left over brown rice):
This one was interesting, but really good. Chicken Parm (baked) bowls with cauliflower puree:
Baked chicken with BBQ sauce, with butternut squash and green apples. Pretty good, though not a summertime dinner imo.
Air fryer salmon over arugula berry salad.
I screwed up the prep, but these taquitos tasted good. I also made homemade salsa.
Pan roasted chicken thighs with pesto over wilted spinach and tomatoes, with roasted potatoes:
Chicken fajita lettuce wraps. This recipe called for the chicken and veggies to be baked, which wasn't great. Next time I'll make them the usual way (cast iron on the stove).
Thai chicken skewers over Thai slaw and a side of broccoli. Not great. The marinade didn't have much flavor, unfortunately.
Couple hits, couple misses. But that's the joy of cooking

Was all set to smoke 2 whole chickens, but it started raining, so I pivoted and threw them in roasting pans and put them in the oven. Stuffed the cavities with garlic cloves, fresh oregano, fresh thyme and sliced lemons. Rubbed the outside with sea salt, garlic and pepper.
The chicken came out great and very juicy. To switch things up the second night for dinner I made chicken pesto pizza boats. First I brushed them with some butter and garlic and toasted the buns
Then I spread them with pesto, added shredded Mozzarella, chopped up the roasted garlic from the chicken cavity, and some sliced red onion.
These were super good, wife enjoyed them as well.
Tonight we're doing chicken quesadillas with the remaining chicken

I don't know enough about the Weber you have but will it not work in the rain or were you just worried you would melt

It works fine in the rain, I just don't have a covered area to smoke at this house and didn't feel like getting soaked. Plus I would have had to expose the charcoal basket while it was pouring to try and get it lit and I didn't want to deal with all that

Had a little celebration for my wife leaving her job to become a stay at home Mom and get our kiddo out of fulltime daycare. I had some SRF Wagyu Fillets in the freezer and decided to make those and try reverse searing for the first time. I got these from a work vendor, so can't beat that they were free!
They had some nice marbling, but given that they were fillets the fat content wasn't that high either. I just rubbed with some SPG and let them come up to room temp
Here's the finished product before I let them rest.
Both steaks were 135 when pulled and were a perfect medium rare
The steaks were definitely buttery and rich with flavor. If/when I try Wagyu again I would try a fattier more marbled cut like a ribeye, but man these were some amazingly tasty fillets

Easy Jerk Chicken
My go to for jerk chicken
1) Boneless chicken breasts
2) Sysco Jerk Seasoning
3) Canola oil
4) Lime juice
Put all of it into a ziplock bag then marinade for 1-3 days. Everyday, move the chicken around some in the bag to allow the marinade to get to all the chicken breasts. The lime juice will actually start to "cook" the outer parts of the breasts. Grill and serve

Well the weather cooled down last week, so that meant it was time for some soup. First I made beef vegetable soup which came out fantastic. I browned the meat and seasoned it before throwing in the crockpot

This week I used our leftover Christmas ham in the freezer and made ham and bean soup which also came out fantastic. I used 2 different bean medleys to have a nice mix of beans and protein, I soaked them overnight, and then rinsed them in the morning
I added the beans, and all my seasonings to the crockpot, since I didn't have a ham bone I used some chicken stock for my broth. No complaints and way less work
I let the beans/broth simmer for about 8 hrs, and then added the cubed ham to the crockpot and stirred it all together.
The finished product, soup flavor was amazing and definitely will be repeating this recipe. It tasted even better last night after sitting all night in the fridge

Man, I haven't shared anything here in almost a year Here were some of my recent favorites:
I'm still being deliberate with my food choices (down 45lbs since last June ), but I do indulge at times. And I love me some burgers. Caramelized onions, bacon, white american and kimchi on this one :
We do salmon usually once a week, and this one was ridiculously simple - air fryer pesto salmon over brown rice and roasted parmesan summer squash.
And then Mother's Day dinner last night - lemon garlic butter scallops with asparagus, bacon and couscous. I've never made scallops before, but they came out beautifully.
And my fiance was craving strawberry shortcake, so I made some biscuits and whipped cream from scratch:
