What's for Dinner?
Well I made chicken fajitas Monday night and had a bunch of various colored peppers left over that needed to be used pretty quick. Which BTW, try fajitas sometime and marinate it in a 2 part oil, 2 part soy, 1 part chipotle tabasco mix. It's pretty amazing. Anyway, this dish would normally just use red chiles but I just made a stir fry out of it.

So a friend of mine gave me a jar of straight from the garden, home made hot pepper mustard. I had some smoked pork chops that I picked up at my favorite butcher shop up north, so I grilled them up, and glazed the top with the hot pepper mustard when I flipped sides. They came out absolutely amazing, all I could say was wow. Sorry for all the pics, but I love food pr0n.

Saute chopped green bell peppers and onions. Add cubed potatoes..so "Potatoes O'Brien". Add some cheese, a couple of sunny side up eggs on top, and drizzle of sriracha and I'm happy.
Insert sausage if I have it on hand.

Don't get me wrong, I cook a LOT, but during the week I generally make one thing and eat it for a few days. I am huge fan of the Costco chicken, could not in any way make a chicken as good for as cheep, and also love broccoli. The GF does not love broccoli so if I get to eat it for a week without hearing about it form her, that is bliss.
We were suppose to get snowed in last Sunday. So drunk off my ass Saturday night (Sunday morning?) I looked in the freezer to see what kind of proteins we had and pulled out a slab of ribs.
Ended up doing a herbed honey mustard sauce. I had a simple base for the sauce but ended up just kind of doing what I thought was good. Anyways, roasted in the oven for 2 hrs at 300* then broiled on high to set in the sauce.
They were amazing. Homemade foccacia bread as a side.

Made pulled pork yesterday, holy shit! was just as good as I wanted. Stupidly I used a pork loin, it's too good of a cut(waste of money). Basically use that or a pork shoulder, throw it in a slow cooker(big crock pot). Dump one to two cans of root beer in the pot, cut up your meat a bit, doesn't matter how much. Cook on low for 6-8 hrs. I did it for 7 hours, added 1/2 a cup of bbq sauce to the pot, mixed and shredded the pork with a fork and cooked for one more hour.
I use sweet baby rays, sweet bbq sauce.
It's was amazing.
