Well since I had some fixings left over...



Pepperoni and banana peppers in front, and a evoo, minced garlic, fresh basil, tomato in the back. Different dough this time. Came out great!

Tired of pizza now though.

I'm so freaking sick of pizza right now. Lol.

May sound odd but I'm making homemade cinnamon rolls and bacon for dinner tonight. It uses basically the same dough as the last set of pizzas did except you swap butter for the evoo that's in the dough.

I'll try and take pics along the way. But now that we have a nice KitchenAid, I have to say, baking is so damn easy to do now. Especially doughs/breads. Lol

Doubtful. Not that that wouldn't be awesome but I'd rather perfect rolls and perfect bacon than risking it and doing the combo together.

So I took a bunch of pics of the process...but don't feel like uploading them all just to show it. I also forgot to take a pic of the cooked rolls before icing them. Lol

Anyway, they were fucking amazing. FUCKING. AMAZING.



So good I'm going to share the recipe. This is the pizza dough and the cinnamon roll dough recipe. The only difference is you swap the same amount of melted butter for the oil.

Ingredients

1 cup warm water, about 110 degrees F
1 packet (2 1⁄4 tsp) dry yeast
2 tablespoons sugar
2 tablespoons olive oil
1/2 teaspoon salt
3 cups flour (may use a little more or less)

Directions

To the bowl of an electric mixer fitted with a dough hook, add the warm water, yeast and sugar and mix on medium high to
completely dissolve the yeast. Add the olive oil, flour and salt. Mix with the dough hook until the dough comes together and
climbs up the dough hook, leaving the sides of the bowl clean.

Oil a clean bowl with olive oil. Dip fingers in oil so you can remove the dough from the mixing bowl and form it into a smooth
ball shape. Place the dough into the greased bowl and cover with a clean towel. Place in a warm, draft free place for 45
minutes to 1 hour, or until the dough doubles in size.

Pull off pieces the dough (about the size of a large orange, small grapefruit) and put it on a lightly floured piece of parchment
paper. Press dough into a flat circle with your hands, then lay it on the parchment paper. Lightly sprinkle with a little more
flour and roll out to a thin circle. Use a fork to poke holes throughout the dough (keeps it from forming bubbles when cooked).
Top with tomato sauce or pesto and add whatever topics you choose. OR for a quick focaccia, drizzle with olive oil, sprinkle
with coarse salt and dried Italian seasonings. Cook until you're happy with it!

For the Cinnamon Rolls:

Let the dough rise once in a greased bowl. Roll it out into a rectangle. Melt a half-stick of butter and pour it on dough, then spread it around. Mix a cup of sugar and a tablespoon of cinnamon together and pour over the butter. Roll it up, cut it into 12 pieces and put in a greased square or round cake pan. Let rolls rise again for a half hour or so (until they are doubled in size) and then bake at 350 for about 25 minutes. Mix up a little cream cheese and powdered sugar, add a couple of teaspoons of half and half or milk. Pour it over the hot rolls. Yummy!

In sticking with my diet, I have continued to find creative, and healthy things to do with Chicken which is my preferred lean protein. I made non-breaded oven baked Chicken Parmesan with whole grain angel hair and salad. I used low fat mozzarella instead of Parmesan, and it came out very good.





Since I'm also doing portion control, I didn't eat the whole breast or all of the pasta. I shared the chicken with my dogs, and saved most of the angel hair.

Well I actually had a snow day today! Lol. Doesn't happen too often but the courts were closed due to snow/ice so we do with them.

Anyway, I decided to continue the KitchenAid exercises and attempt my first white bread. Started at 6:45AM! Lol

























I'll post sliced pics a bit later. This made two loafs that get cooked together and I only have one legit bread pan so I made due with a small casserole dish. It worked but it's misshapen so I sliced it while it was warm. But...it's delicious!

Yea I started saving our bacon grease in a little container and put it in the fridge. It basically turns into a spread. I've been using it to make eggs but thought this was a good occasion to use it as well.

That's normal here (the South). We use it in our butterbeans (my friend's dad uses bacon grease for almost everything), some breakfast meals, etc. Chicken or sausage grease can be good as well. Obviouly you don't need much. Good flavoring as well if you're making a roux for gravy.

Local market has excellent Prosciutto and salami.

So we do fruits, baguette, meats and cheeses. Makes for a fun interactive dinner with the family.

Had another guest over to the house yesterday. The girls did a "Downton Abbey" marathon. And she requested pizza. Lol. :/

I did a meat lovers that had pepperoni, bacon, and sausage. I mixed minced garlic, minced onion, red pepper flakes, some Worcestershire sauce, some dried oregano, and finally blue and parm cheeses into the mild italian sausage then made little balls and precooked them. Turned out great!



I also did a veggie with bacon for the ladies. Not pictured.

Getting better and better with this pizza. I hope so, it's like the fourth time I've made it in 3 weeks or something. Anyway, I bumped up the yeast and sugar in the dough as well as the sugar in the sauce. And it's JUST about where I want it.

Made my famous Marinated Tuna Steaks, but since I'm dieting, I replaced the soy sauce with low sodium soy sauce, and instead of just using fresh squeezed lemon, I used fresh squeezed lemon and lime juice, and a lot of garlic. They came out great, but you definitely could tell that the soy was overpowered by the citrus.

Got 2 gorgeous tuna steaks from whole foods

2 hours is a long time for fish. I never go over 30 minutes. But I'm sure it's amazing.

For tuna and salmon I do a combo of soy, franks sweet chili sauce, and a little bit of garlic. Try it sometime!

Yeah, you only need ~20 minutes, I just threw it all together before I did my asparagus salad and uncovered the grill, etc. I let it go longer since they were so thick. I kept flipping them and massaging the marinade in to the meat

My wife just got it for Christmas. After searching around I picked out the Professional HD Lift-Stand Mixer from Sams Club. Costco may have the same. It has a 475 watt motor which is less than the expensive Pro 600 (575) but more than any of the artisan series (325). It's also just a 5 qt as opposed to a 6 in the Pro 600.

But! My MIL got it for her for $250! Lol! The Pro 600 goes for double that.
