The Box
Ingredients:
Dough - we bought some ready dough from the grocery store
Feta Cheese
Mozzarella cheese
Egg
You make the dough into the shapes you see in the picture, stuff it with Mozzarella cheese and feta cheese and put it in the oven at 375 for about 12-13 minutes.
Take them out, take a spoon and push the cheese down into the dough thing and put in an egg. Put it in the oven on low broil for a few minutes (literally, make sure you watch it so nothing gets completely fried) and it's done.
Very very easy to make and tastes amazing.

Ingredients
1 tablespoon butter
2 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup chicken broth, divided (3/4 cup and 1/4 cup)
1 cup heavy cream
1 pound skinless, boneless chicken breast halves
salt and pepper to taste
2 tablespoons vegetable or olive oil
2 tablespoons chopped fresh basil
8 ounces fettuccine pasta
Melt butter in a saucepan and cook the garlic for about 1 minute, add the sun dried tomatoes and 3/4 cup chicken broth. On medium low heat let the tomatoes absorb the broth for 10 minutes. Turn up the heat to medium and stir in the cream, lightly boiling for about 10 minutes. Keep stirring it. Medium heat should do it. Take it off the heat and set aside.
Start the pasta, cooking until almost done. You will finish the pasta in the sauce later. While the pasta is cooking pound out the chicken breasts a little and lightly fry them separately in a large skillet with some olive oil and butter, adding some salt and pepper to taste. Once the chicken is lightly browned set aside, leaving the pan drippings in the pan.
Drain the pasta. Add the remaining 1/4 chicken broth to the chicken pan, add the pasta and cream sauce. Cut the chicken into large bite sized pieces and add to the pan. Add the Basil and stir at this time. Keep stirring over medium high heat and reduce the sauce a little until it just begins to thicken, then turn off the heat. Let stand and cool for a few minutes and then serve.

I did a mashup of [mostly] leftovers. White rice + one piece of breaded chicked (cut to small pieces) + a small amount of Pasta Sides (I think thats what its called, it was one of those quick pasta things in a bag - I didnt cook it ) + 2 scrambled eggs (not leftover obviously). It was actually pretty good, but Im still hungry.

Last two nights I did something really fast and basic when I got back from riding --
Grill up 2 mahi-mahi burgers from Whole Foods
Put pineapple salsa (also from Whole Foods) on them.
Cut up and eat.

Last night I made baked pork chops with Southern Ce's Original BBQ Rub, garlic parm mashed potatoes, fiesta corn, and butterflake cresent rolls. YUM!! I completely stuffed myself.

Found a Carne Asada recipe and marinated some nice skirt steak in it for 48 hours.
Grilled it up tonight...about 2 minutes on each side, let it rest...hot damn it was tasty.

Needs more Lemon Pledge
So last night I made these two things...
Main:
COMMENTS: I suggest adding 2Tbsp of cayenne to the marinade. The paprika was a nice subtle flavor, but those with a desire for a little more "punch" might like the cayenne. Alternately, you could whisk some honey and some red pepper flakes and use it as a drizzle over the shrimp once they come off the grill. Lime juice would be good, too.
Also, one pound of shrimp was perfect for two people. I used grill baskets instead of skewers but for a large group, the skewers make a nice way to eat it. We just put them in a bowl and fought over them.

2 Tbsp sweet paprika
2 Tbsp smoked paprika
1/2 teaspoon ground cumin
2 garlic cloves, minced
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
2 Tbsp lime juice
1/3 cup olive oil
1 lb of large shrimp, cleaned and peeled, tails on
Bamboo skewers
Method
1 Soak the skewers in water for half an hour before grilling.
2 In a large bowl whisk together the spices—the paprikas, cumin, garlic, salt, and pepper—and the lime juice and olive oil. Add the shrimp and toss to coat with the marinade. Keep chilled for half an hour to an hour.
3 Prepare grill for medium-high direct heat, or heat a grill pan. Thread the shrimp onto skewers. Baste the grill grates with some vegetable oil so that the shrimp don't stick. Grill or cook a few minutes per side (2-4, depending on the size of the shrimp), until the shrimp are just cooked through. Remove from grill and serve immediately.
Serves 4.

Ingredients
2-3 cups of cherry and/or pear tomatoes, sliced in half
1 cup of chopped cucumber, peeled (and seeded if the seeds are bitter)
1/4 cup crumbled feta cheese
1 Tbsp chiffonaded mint leaves
1 teaspoon fresh, chopped oregano
1 Tbsp lemon juice
2 Tbsp of finely chopped shallots or green onions
2 teaspoons olive oil
Coarse salt and freshly ground black pepper to taste
Method
Gently toss the tomatoes, cucumber, feta, onions, mint, and oregano together. Dress with lemon juice, olive oil, salt and pepper to taste.
Serves 2-4.

Making Shepherd's Pie tonight with a mexican twist. One of my FAVS!!
Season the ground turkey w/ chopped veggies and herbs (onion, garlic, jalapeno, cilantro, red and green peppers), Adobo, and Sazon. Top it with "mexi-corn", then garlic parmesan mashed potatoes. Sprinkle a bit of crushed red pepper on top and melt some sharp cheddar. Serve with sour cream.

I made falafels. This is my 2nd attempt and I think I got it right this time. Served them on a pita with tzaziki, veggies and sriracha.
My gf is a vegitarian. I'm looking for more vegatarian meal ideas for a meat eater. Please share if you have any.

1 can of chick peas - drained
1/2 white onion chopped
2 cloves of garlic
1.5 tablespoons cilantro
1 teaspoon of parsley
2 teaspoons of cumin
1/2 teaspoon of turmeric
1/2 teaspoon of baking powder
1 cup of bread crumbs
salt and pepper
A splash of water
Mix/mash everything together into a paste. Make little balls - meatball sized. Deep fry the balls in a pan of oil until crispy.
