BBQ Sauce

OK, I'm dying for a killer original recipe. I prefer tangy and spicy... BBQ masters... what do you use? Let's see what you pimps got.

Marlboro just sent me this whole BBQ cookbook with some pretty sick recipes in it - I don't have the BBQ sauce recipe in front of me but I'm sure somebody does...

Jamaican Barbeque Sauce

Ingredients:

˝ cup ketchup
3 tablespoons soy sauce
2 scallions, minced
2 tablespoons dark brown, sugar
2 tablespoons distilled vinegar
1 tablespoon minced fresh ginger
1 garlic clove, minced
1 tablespoon dark rum
In a small saucepan, combine the ketchup, soy sauce, scallions, brown sugar, vinegar, ginger and garlic and bring to a boil. Simmer the sauce over low heat until thick, about 10 minutes; stir in the rum during the last 2 minutes.

i had an insane bbq sauce two weeks ago, it was perfect but the cook wouldn't give me the damn recipe i was pissed

this sounds good but not spicy enough, what can i add to spice it up a bit?

and what's a scallion?

Green onion. Looks like a couple really tall blades of grass with a white "ball" on the end that the roots protrude from.

i would suggest adding cayenne, habanero or pequin to your likening , i also add tabasco chipotle

(dont forget the dro!)

i use A1 over any bbq sauce..but its steak sauce...is there any diffrence between the 2? bbq and steak sauce?

Someone just told me this weekend they add a capfull or 2 of some crab boil for that heat...you should try it out...sounds yummy!!

Last issue of Bon Appetite had a good BBQ (or should I say "Grilling" ) sauce. Went something like:

1 diced oinion
few garlic cloves
1/2 cup of Jack Daniels (what I used, but any bourbon would work?)

fry all that up , but for fucks sakes don't burn the garlic or you will start over

Then mix up:
pepper
salt
2 cups Ketchup
1/4 malt vinegar
1/4 Dijon
2 Tbl worcestershire
1/2 cup brown suger
1/4 molasses (honey works too)
tsp tobasco.

I used it for chicken breast on the bone. Peel the skin back, but don't rip it off, rub some salt, pepper and butter under the skin. Baste the chicken when there's around 5-10 min to go, on low heat..don;t want the sugar to burn.

I made this 3 weeks ago and just used up the last bit last night on some ribs, so it will keep in the fridge.
