Extreme II should be plenty for most purposes.
If you don't mind paying a bit more (and really, a good SD card will last ages) I highly recommend the SD Plus cards by Sandisk which have the built in USB. Really convenient.

DO NOT i tell you DO NOT get from ebay... a lot of fakes
and i recommend you to get 2 4gigs if you want 8 gig in the event that something does happen, you wont lose all of your photos.
look into the transfer speeds, but SDHC cards are a must for DSLR's.
