coolant temperature
OEM thermostat should begin to open at 169-176°F and be fully open at 194° F. Ideally engine should have 194° F then. If coolant temp is above 206 °F both fans should run on high.
If it went above that and car wasn't in some really heavy load scenario (like going uphill in hot environment or race track or towing) then I would assume something isn't right. If coolant level ok then I would replace thermostat first. Also could make sure that cooling fans are working. There might be other issues but those two are probably most common.
