I wasn't a huge fan of sauerkraut until earlier this year. There's a german-ish place we go to and my wife gets their kraut. They cook it up with mushrooms and bacon and it's pretty killer. Sidetrack to earlier this pandemic, when everyone started doing sourdough, I eventually bit in and made some starter which was cool and all, but really what tickled my nerd pickle was the fermentation process. So I started researching more and decided to try making some kraut since it's a next logical step.

And after the first batch, I'm hooked. Mine comes out crunchier than most store bought and had a killer sour bite that, frankly, is probably off-putting to a lot of people. It's like, really aggressive. I'm still playing with the salt levels to get it dialed in because if anything, it's a little too briny right now.

I cooked up some polish sausage with onions and peppers last night (and some homemade freedom fries) and man, mixing all that up with the kraut... chefkisshisownfingersdotgif

The wife thought I was a fucking idiot for making it with red cabbage. Almost 2 months ago, I made some fish tacos and had her get a red cabbage to garnish them, and of course she buys this giant mammoth of a cabbage when I needed hardly any. Rather than waste the rest of it, I chopped it up and jarred it to ferment. Wasn't sure how it'd turn out, but I like it better than the green. Not sure why places don't use it more often.

I did pickles a long while back. But it felt weird buying cucumbers at the store. So I started down growing cucumbers to make some pickles from start to finish, but they didn't come out good. They were sort of bitter yet flavorless and had way too much rind. I was looking forward to it too, because there's something about homemade that just beats everything else. Probably because it's not made for the 50th percentile consumer so you can make it as sweet/sour/spicy as you want. That and the secret ingredient is "love".

Ever since i found those tiny guys, I've stopped buying American or the bigger varietals. Persian cucumbers are smaller and way crisper and great for quick pickling as well. Make great bread n butter style as well.

might be TMI; but I've been battling a case of pinworm(roundworm) infestation.

holy fuckin shit, my stomach is getting torn up on a nightly basis.

tried natural remedies first; eating raw garlic everyday and every night. along with bitter melon or bitter gourd.
Tried kombucha and kiefer (probiotic yogurt milk) but this made my stomach worse.
the garlic and bitter melon is the best so far, but still hasnt removed the worms from my poop.

today; got some OTC Pinworm medicine called Reese's. hopefully they fuckin die.

along with washing my clothes and sheets every day.

Been getting more acid reflux/GERD symptoms over the last few months, probably stress-induced but have had to watch what I eat to keep it in control

same, I'm taking some shit every day to keep my reflux in check...cost me a ton of cash to have an endo done to tell me i have reflux level 1.

how'd you figure it out? trying to find a lost key in your stool? or itchy (mud) but or just lost a ton of weight and not even doing coke?

started with constipation for a week.
I'm super regular, I eat veggies everyday....so I knew something was up when I couldnt pass
after the initial week, I thought I was fine...day time, no hurt no pain.
every fucking night tho; my stomach would just tear me up, man. but then the day time, I'm fine.
finally got to researching which led me to look at my stool. sure enough little white thread like things in the stool.

I'm using COBRA insurance and I paid late, so of course my insurance lapsed. and every single doctor I called either didnt want to see me (symptoms too close to COVID) or they were booked for two weeks.

I've always been halfass about washing produce. Like, I'd just peel the sticker and rub an apple on my pants and call it good. But the wife is more, uh, adamant, about cleaning stuff before eating. So we discussed it and compromised, and now I wash everything before eating. I was washing some strawberries the other day and a little worm thing came out. Looked like a miniature caterpillar. So I'm a little more cautious now.

I guess it's not just a myth.

Yeah, wash your produce.

The only produce I don't wash are mushrooms as we're supposed to brush them but even sometimes, I just throw them into the strainer for a rinse. If I want extra protein in my produce, it'll be on my terms.

Mushrooms I go extra thorough on. I'll rub down each and every mushroom tip until it's squeaky clean. Then trim off the very tip of the stem end that was in the poopdirt.
