Grill Recipes

Ok, so some of you may have seen my grill thread and now I want to cook everything on it. I bought a griddle and have made eggs and pancakes along with burgers and such but what other recipes you got? I have a skirt steak I'm going to marinate with some aspargus, some halibut, and I'm going to do some ribs but what else?

Veggies? Meat? Fish? Recipe, please

for veggies, get one green, and one yellow summer squash, slice them thin maybe 1/8-1/4" slices, then add about a half of a sweet onion sliced fairly thin and then cut in half. Add maybe a 1/2 teaspoon of minced garlic then put it all in a bowl and drizzle with EVOO, just enough to coat all the veggies when you mix them up. Once they are coated I add seasoning salt, and then I use a BBQ rub that I have which is made of Tellicherry black pepper, garlic, Kosher flake salt, sugar, red bell peppers, shallots, parsley. Anything similar will work.

Mix that all up so the seasoning is evenly distributed on the veggies, add to taste. I then put them in aluminum foil and put them on the grill with whatever Im cooking. About 10 minutes if you want them crunchy, or 15 if you like them softer and you are good to go.

Here's a super simple one that always turns heads at my house.

Super thick pork chops marinated for 3 hours in chipotle tabasco sauce.

That's it. Lol

Oh I like this thread idea. Grilling is really the only way I will really cook.

Awesome, keep them coming! I have done burgers, chicken burgers, filets, NY strips, corn, asparagus, ribs, and loving this grill. Need to spice it up tho!

Paprika grilled shrimp


Ingredients

2 Tbsp sweet paprika
2 Tbsp smoked paprika
1/2 teaspoon ground cumin
2 garlic cloves, minced
1 teaspoon Kosher salt
1/2 teaspoon freshly ground black pepper
2 Tbsp lime juice
1/3 cup olive oil
1 lb of large shrimp, cleaned and peeled, tails on
Bamboo skewers

Method

1 Soak the skewers in water for half an hour before grilling.

2 In a large bowl whisk together the spices�the paprikas, cumin, garlic, salt, and pepper�and the lime juice and olive oil. Add the shrimp and toss to coat with the marinade. Keep chilled for half an hour to an hour.

3 Prepare grill for medium-high direct heat, or heat a grill pan. Thread the shrimp onto skewers. Baste the grill grates with some vegetable oil so that the shrimp don't stick. Grill or cook a few minutes per side (2-4, depending on the size of the shrimp), until the shrimp are just cooked through. Remove from grill and serve immediately.

Serves 4.

Tequila Lime Grilled Chicken
(makes 2+ servings)

Ingredients:
1/4 cup tequila
1/2 cup lime juice
2 tablespoons oil
1 teaspoon lime zest
1 jalapeno pepper
2 cloves garlic
1 handfull cilantro
1 teaspoon cumin (toasted and ground)
1 teaspoon salt
1/2 teaspoon black pepper
1 pound chicken breasts (boneless and skinless)

Directions:
1. Puree the tequila, lime juice, oil, lime zest, jalapeno, garlic, cilantro, cumin, salt and pepper in a food processor.
2. Place both the chicken and the marinade in a freezer bag and marinate over night.
3. Grill the chicken until cooked, about 5-7 minutes per side.
