If you're considering 2WD trucks and thinking about off road ability then you definitely don't need factory lockers on anything. I'd wager you don't need them at all to be honest. I can count on one hand the number of times I used the lockers in my Jeep and I put that thing through some shit. Get some good tires and send it.
Definitely consider a 4Runner. Still expensive but less so than the Cruiser crowd and just as reliable. The tow rating is like 5k lbs though I think.
The GX is a solid car that does great but the fuel economy blows and the interior isn't all that big relative to the overall size of the thing.
If you can't find a good Cayenne, consider a Touareg. They are basically the same thing for less money. Is the tow performance of the V6 not adequate? I'd just get that one as it's more reliable, less to maintain, and chugs less premium. All you're looking for is a daily after all. You'll get the Porsche experience for a bit less cash.

I had no idea the VR6 Touareg could tow 7700lb at all .. figured that would be V8 / TDI territory.

Not having much opportunity for much off-roading nearby (4-6hr drive to Hill Country) other than "gettin' muddy" I'll probably be looking at 2WD as well.

Yup. It was pretty much the same as the one in the VW. I think the Porsche had a bit more power but not a ton.

Plus side to them:
Dirt cheap, VR6 tows the same amount as the V8, reasonable gas mileage, still has air suspension / differential if needed, and extremely part abundant.
I found 2 of them local for under 8k and they both include roof racks / upsized tires and 100-120k miles.

Quick search found a 2017 Wolfsburg Edition for $25 with <100k on it.

Keep in mind that the Touareg is basically the same as the Porsche and comes with all the fun service and upkeep costs too...don't think it'll be like a GTI or Passat to maintain.

I found one in Vegas for $7500 ... up to date maintenance, 109k miles, and said he would throw in some Offroad tires depending on the deal.

$7500 with F/R lockers? That's a rare spec, buy it. It likely won't really go down in value much over time because of the rare spec. Finding another one with lower miles and the front locker will be damn near impossible.

I had an epiphany this morning .. if I buy a Touareg with air suspension .. it will certainly fit into my garage even with some offroad tires (gives it approximately a 1.5-2" lift) and the roof racks.
With that being said, I'm sure this overwhelmingly convince my wife to buy it now.

Honestly, smartest route for sure given the reasons I listed in my first update.
I'm about ready to throw in the motor in the yellow car but selling it may take between 1-2 months depending if I find the right buyer.

I swear, the LX / Landcruiser / Tundra owners know what they have ... my price range gives me 200k+ mile options.
I'd argue they do last a long time and the reliability has been demonstrated many times before but, they're bland AF.
It's the smarter choice but, we both know I'm not smart.

It's also huge compared to the Cayenne/Touareg.
I frequently browse the by owner part of CL to kill some time. Found an immaculate W123 300D with 225k on it, but it's so clean I'd feel bad parking it outside under the tree in my driveway with the fine sap it drops.

Landcruisers & Tundras measure at nearly 75" tall - my garage is 78" tall but at the approach angle, it's actually less than that.
The Touareg is 68" tall - best part? It's 7" shorter than the A7 and it's the same width .. I'll have more garage space parking it.

Well I'll also argue that the brand new Rubicon also comes with the most modern tech, no miles, minimal maintenance, and a warranty lol but even a used JKU Rubicon will run you at least $30k for a good one. That said it'll also have lower maintenance costs but still.
Everything you've said so far shows that you don't need a Rubicon to do what you want to do with this thing. Once you get out on the trails, you'll quickly find out if you want something more or not.
