Digital B&W photo question (Noob here)

I'm not sure if I'm asking this right, but how do I maintain the color of the focused subject in a frame, but leave the foreground/background or OOF area in B&W? In other words, I just want the focus subject to be in color, and everything else in B&W. Is this something that is done in post processing or can this be achieved by tweaking the settings within the camera?

I own a Rebel XT by the way.

It can only be done in postprocessing.

Cameras will never be smart enough to do that. If you focus on a person's shirt,
the camera will never be able to figure out if you what you want in color: the button you focused on, the entire person's shirt, the entire person, ......

In camera settings always apply to the entire picture.
