It depends... How many speakers are you putting in and where do you plan on mounting the amps?
I replaced my fronts with components. I did 15ft each Tweeter in the dash and 10ft for each mid in the doors. The wires reached all the way to the trunk/bumper when run/tucked into place.
If you are doing the rears you will probably need about 5' each speaker.
75ft is good with more to spare in case you want to replace the center.

I like the idea Wong05tsx had with running string from what area to what area, measuring that length, then adding a foot or two.
Seems like a straight-forward logical way to measure speaker wire.
