Thanks for all the useful info in the forums.
I've identified a Bluetooth-capable HU in my price range - the Sony MEX-BT3800U - and the Metra kit for my non-navi 2000 3.2 TL - 99-7868.
I just have two questions left.
1. Which wiring harness kit do I need to adapt to my existing factory wiring? (Such as the Metra 70-1721.)
2. Do I need a steering wheel adapter to keep my steering wheel controls? (Such as the Metra ASWC.)

I can pair with my HTC Fuze, play music and make calls. Woot!
My primary gripe is the sheer decimation of the center console required to access the radio.
I got a PAC SWI-PS and it seems to work fine. There're a couple of videos on youtube about programming them. That was a big help. I also decided to go with the external mic and mounted it behind the steering wheel for now. I'd rather not futz with the A pillar if I don't have to.
One interesting note - the wiring harness (I ended up getting from crutchfield) didn't have pin 3 mounted (which is required for the SWI-PS). I got around this by just inserting a spare length of wire into pin 3 and splinting it to the adjacent wires. (We'll just have to see how this holds up over time.)
Time to get some sleep.
