White
white is a breeze for the most part...the tan colored interiors that most people get when they get white cars will give you the most problems...

I agree with evocative, there's no way white is easier to maintain than grey. I do agree however, black is a bitch to deal with since I drive one. Gotta get a carwash like once every 3 weeks....

Yup, whatever color you get...a good LSP will keep it much cleaner. Plus the splash guards help a ton.
My problem is that I let my wife make the decission on the int color, Parchment! Looks great, but I am almost paranoid about keeping it clean. Especially at the bottom of the door frame where I have to lift my feet over to get in and out of the car. That area gets smugded very easily.
Light colors appear cleaner than dark colors.
The advantage of White is that is is very difficult to see swirls - Black they stand out like a sore thumb.

Great info on maintianance and products. I'd recommend that you Clay, Wax and Protect your new car. Then upkeep on a regular basis via wash and Quick-Detailer/Spray Wax & a quarterly to semi-annual Clay/Polish/Wax routine.
Light interiors are not harder to keep clean IF you work them regularly. If you let 'em go or have lots of spills, etc, yes, they'll look like crap; but so will any car in those conditions.

I woudl say lighter colors in general are easier to maintain, but I find Silver is awesome, hides so much and it really can hide the dirt. White is good too, but I find since we all have a natural reference for white it can show dirt more easily.
