Temperature gauge only goes up when accelerating

Good evening guys, have an Acura TL 2007 125K miles. Recently just fixed up my car of a front end crash. Had it sitting for about 6-7 months. Haven’t been driving it a lot, but haven’t done any of the tunes up which are oil change, transmission drain, spark plugs, etc. Car has a brand new radiator installed & new fans. Temperature gauge only goes up 2-3 lines up halfway when accelerating at high speeds either on regular streets or the express way. No coolant leaks or any of that sort. Car doesn’t over heat when stationary or at regular speeds. Gauge goes up, but quickly goes back to normal readings after 5-10 minutes ? What can it be ?

Bad thermostat? Air in the system? Connect some scan tool, graph the temp and check how much it actually changes.
Maybe it only varies by couple degrees.

I’ve gotten a lot of opinions & it’s all pointing towards the thermostat. Crazy how quickly & out of nowhere they can give out. Car wasn’t having issues 3 days ago.
