Dude there a million and 1 thing you can put on your plates. I have
NBP-TL PA plates.
Also about the insurance i will advise to change your license to NC and change few bills to arrive at your dad location. just to cover your butt.

Hoopz,
Where did you TITLE the car?
My friends in NC moved from Florida a few years back and let me know they ran into a small problem when they registered their 2-3 year old car. They paid the taxes in Florida when they bought the car. I'm not sure if I am getting this 100% correct, but they said each year, they now have to pay property tax on the current value of the vehicle. So they were going to get double dinged on TAX since they already paid it in Florida. I wasn't sure if N.C. would give them a pass or a credit based on the tax they already paid.
I'm not 100% positive, but that's how I understood it. I'm not sure if that is a "registration or plate renewal" tax or just plain property tax. Yearly renewal might be extra.
Just a heads-up. Please let me know if I am way off.
