I love tobiko uzura gunkan-maki. What you will notice is that while I do like sake (salmon), I don't typically order it. And tuna needs to be bluefin or FWIW, no fanku to albacore.

When I frequent a new Japanese joint, I will always try the tamago and saba nigiri sushis. It gives me a good indication of the chef's abilities. And of course, looking for any fish offerings OUTSIDE of just the standard hamachi, sake, and maguro.
