Does anyone know of an audio converter that will run on the iMac iOS that will convert 5.1 wav to 5.1 flac ??

Try xACT. I use that to convert to lossless FLAC files, I think I could use it to convert 5.1 WAV file to a lossless FLAC.

I'm an old-school Unix geek, so I do this step from the command line (with the command-line version of FLAC installed via Homebrew). I wrote a Bash script to process a whole folder full of WAVs and generate corresponding FLACs, then I use a conventional Mac app named kid3 to apply ID3 tags.
