Engine Bay Detailing

So I'm waiting on my P21S TAW before I start detailing engine bays and I had a few questions.

1) Light water spray in the engine bay is ok? Would it be better to just use a wet shammy and try to rub everything down?
2) What parts should I be covering other than the air intake?
3) Are there any electrical wires I should be wrapping up?

Yep, cover your intake, your distributor, and your battery at least, I also like to cover my alternator. I wrap them all in plastic grocery store bags, and then you can degrease and power wash to your hearts content
