I have an older HP 750xi at home which still works well. I needed a new color ink cartidge and cringe at paying $55 for a brand new one.
I started browsing ebay for ink and saw people sell "expired" original HP ink for significantly less. I started doing some investigating and found that ink doesn't really expire quickly and that it is safe to buy "expired" ink as long as the date is withing 4-5 years.
I decided to take the gamble and won an auction for HP ink which expired in 2009 for just $19. I installed the ink and it works great! I am a happy camper and will be buying ink this way going forward.
According to HP, the expiration date is stamped on boxes to guarantee "freshness" but they admit it "may work after the date on the box"
So for anyone looking to buy ink, take a gamble with expired ink, you will save a ton of cash.

My conspiracy theory is that companies have started putting exp. dates on everything so you're more likely to throw it away and buy another one then continue using the product.
These companies don't care if you actually use the product they just want you to buy more of it. AFAIK there's no regulation to prevent companies from putting false exp. dates so you'll throw it out and buy another so why wouldn't a company do that? That's the easiest way to boost your sales.

I'm not saying there aren't some things that do have a legit Exp date but even milk is usually good for a few days past the date. They also have the "Sell by" date which while not the same as an Exp. date, it's usually treated the same.

Last year I found a new HP inkjet all-in -one printer on sale so cheap that it cost less than replacing the ink cartridges in my current hp printer.
...so I threw out my current printer when I needed new ink and just bought a brand new printer that came with ink.....for cheaper than replacement ink.
BTW....my old printer was a network printer, but not wifi....the new one is.
Printers are a loss....the $$$ is in the ink.

750xi is a pretty old machine so you lucked out in being able to use the expired ink cart. I believe the 750xi came out during the time when manufacturers were not so dependent on making profits off ink cartridges. And if I remember correctly, those ink carts have a lower price/ml cost vs newer carts.
Now, if you had a newer machine and tried to use an expired cart (even a brand new unopened one), it may not have worked because some cartridges are designed to stop working after the expiration date even if the ink cart is still good.
Then there's the cartridges that get tied to a particular machine. Once you install a cartridge in one machine, if you try to use that cartridge in another identical machine, it won't work because it got registered to the first machine.
Now, if you had a newer machine and tried to use an expired cart (even a brand new unopened one), it may not have worked because some cartridges are designed to stop working after the expiration date even if the ink cart is still good.
Then there's the cartridges that get tied to a particular machine. Once you install a cartridge in one machine, if you try to use that cartridge in another identical machine, it won't work because it got registered to the first machine.

unless you need color, get a personal laser printer. No more than $100 and they print hundreds of pages even on the starter cartridge. My brother laser printer has lasted for 3 college years and is still going.
I'm not a fan of ink jets..but the all-in-one officejets are kinda cool for their scan to network share capability. But i dont know who would buy an inkjet for a small office.
the new HP inkjets are junk. $30 makes them disposable printers. Did you ever hear the story about how HP went about cost cutting? One of the guys stood on top of their older durable ones and pretty much said dont develop them to withstand someone standing on it. So in came the universal platform for cost savings.

I believe the trick to getting around the ink expiration with HP Inkjet printers is to not install the software that comes with the printer. Just install the basic printer driver.
I agree that new inkjet printers really suck. I bought an Officejet a few years ago and it was garbage. It was loud, shook my desk when it printed, didn't always feed paper properly, and then it stopped being able to suck the ink out of the tank. I never had to trash a printer after barely a year of use before. I replaced it with a Laserjet CP1525nw color and it's a much better machine. It can be had pretty cheap considering that it's a color laserjet. A set of toners costs more than the printer.
