Clutch/Shifting Issue?? 03 Type-S

I have a question about the clutch on my Type-S (I am a newbie, just got the car).

Just bought the car a few hours ago, everything is fine on it, but I was wondering about the clutch.

I don't know if it's just me, I'm still gettin used to the manual tranny (even though I drive my dad's truck all the time), but it's really difficult to take off from a stop. The only way to take off without the car turning off is by letting go of the clutch and stepping on the gas SUPER QUICK. And when that happens...well it really takes off and kinda peels out. I don't want to be driving like that all the time. What can I do?? Please help the new guy

(The dealer said the previous owner had recently replaced the shifter) The car also has a lot of mods on it already, wheels, AEM Intake, Greddy Exhaust, Hondata.

Ok, I have an 'update' I guess you can say.

After driving the car a bit more, I've gotten more used to it. I guess what I was trying to explain the first time around, is that I'm basically stepping on the clutch and the gas at the same time to take off. I take my foot off the clutch too much, and it stalls out. I have to barely release the clutch like a few inches in order to give it gas.

I was wondering if this was normal, or should I be able to let off the clutch a bit more? I wanted to know if others had this type of thing going on. So in conclusion, the question would be: About how much do you depress the pedal without the car stalling out?? For me, it's 1-2 inches.
