She won't learn that she's driving carelessly until something major happens.

The mature thing to do is meet with her, ask her to listen to what you have to say and then let her respond with out interruption. Let her know how you feel & make it all about her. Then if it still doesn't come to a mutual agreement, just keep saying to yourself "Women just don't know how to freaking drive!"
