where to get good meat rubs

not the local message parlor :P



Anyone know where to get some good spice rubs? I made a gallon 2 years back and am finally out and am to lazy to make another batch

depends.. I prefer wet sauces.. but most rubs are dry...
I am always inclined to make my own... lots of garlic, hot sauce, paprika, honey, parsley, salt, fresh black pepper... more garlic (what can i say, i am italian).. throw it into the food processor and grind the living hell out of it... marinate the poultry in it for up to 8 hours and use the rest of the sauce in the container to brush on the meat while BBQ'ing.

I would try the food network website... i am sure you can find one to your liking... and i am sure Al Roker has some decent ones online.

the key is to find what you like...I like the spice/bite, but I like the sweetness as well.


did you not post one for BBQ wings before?..if you like that, stick with it.. I know it gets boring but just change an ingredient up... BAM!

It should probably vary by type of meat you are using, something that compliments pork well may not do the same for beef. Experiment with flavors you like and see how it turns out, come up with your special blend and use it, make everyone wonder.

As I said, I usually make my own every year about this time. Usually make a couple gallons and give it away as xmas presents. I'm just to lazy this year, and there are no local places where I can buy lbs of good seasoning with out having to drive an hour or so

stubbs is good, but I can't find it in bulk, I grill like 6 nights a week and need a large amount of whatever i'mg onna get. Stubbs doesn't have enough heat either.

I make my own rubs. Basic recipe is salt, sugar, pepper, paprika, and then depending on what flavor you want, add chili powder, cayenne pepper, garlic powder, ground mustard, herbs like thyme, sage, etc.

I tend to keep it simple for the grill, and then add sauce later for more flavor. For long BBQ sessions I'll also wet mop during the process. For BBQ I prefer dry rubs over the wet pastes.

You need the BBQ bible. There's lots of dry rub and wet rub (pastes) here.

Buy the gigantic bottles of dry spices from Costco for your rub stuff. Although spice enthisiasts will say that you should grind your own stuff, it ain't worth it for the volume needed in a rub. Also, use kosher or sea salt. It needs to be a bit coase. Don't use iodized mortons salt for a rub.

I only make enough for a few appications at a time. I find that rubs get a little 'old' tasting after a while -- not really rancid, but not as flavorful either. I think the sugar oxidizes or the whole thing takes on some moisture or something, even if I store in a zip lock baggie.

the big bottles at costco won't be enough. I ended up buy 2 lbs of each spice I need last year There are a few places out here that grind their own stuff, i'm probably gonna make the 2 hour drive to them.

I still have some left, they are in air tight mason jars, think the spices are still good?

Mason jars are the best for spice storage(unless you invest in a Foodsaver vacuum packer).

I think they make nice containers for the rub too. They make a smaller Mason Jar, like for the little jam batches, etc that are decorative. That'd make a great Xmas gift Scott.

Smell and taste them and see. I think it really is the sugar that made the stuff go bad, not the other spices.

Mason jars sound better for storage then ziplock bags!

guys,
I just called a distributor in Baltimore I used to deal with when I was in the pizza business. He says he can ship bulk spices to my door. I'm faxing him a list off their website to check out his prices.

We'll see how they fair. I know their stuff is high quality & they carry several imported/specialty items.

Not to pimp out Penzey's too hard, but they have a Chicago steak rub that is not as spicey as the Montreal version. It has a slightly different flavor, like they left out some peppers or onion.
