I found out that the walnuts have to be perfect for this dish to be executed well. The sauce second. The rest is very simple and can be made in less than 10 minutes for appetizer.


Heres the recipe:

4 oz walnuts
1/2 cup sugar
1/4 cup honey
1/2 pound prawns, shelled and deveined
2 egg whites
1/4 cup cracker meal
1/2 T white vinegar
2 T mayonnaise
1 T sweetened condensed milk
1 T sugar
-------------------------------------------------------------


Place walnuts in cold water in a saucepan. Heat to boiling and boil for 10 minutes. Remove walnuts from boiling water. Put walnuts and 1/2 cup sugar into 2 pints of newly boiled water for another 10 minutes. Remove walnuts from the boiling water, then coat evenly with honey.

Next, deep fry the walnuts at 325 F for 5-8 minutes, until golden. Dry the shelled and deveined prawns with a paper towel. Coat the prawns with the egg whites, then roll in cracker meal. Deep fry the prawns for 2 minutes.

Mix the vinegar, mayonnaise, sweetened condensed milk and 1 tablespoon sugar in a hot wok or frying pan and fry the prawns in the mixture for about 1 mintue. Serve with waluts over rice.

looks like we all ate well lol... love anything marsala.

we had scallops, HUGE oysters made Rockefeller style, dungeoness crabcakes (the best I ever had), calamari, 5 whole lobsters - all seafood was from Whole Foods - tasted incredibly fresh . french style buttered brussel sprouts halves in a heavy cream sauce, french bread, peppered beef, lamb, and pork (the last 3 made indian style), hazelnut truffles, and custard. that's all I can remember atm... yea I think I gained like 5 lbs in 2 days... thanks mom!

Christmas eve - Chicken Tuscanny at a nice small local eatery - it was a pan seared Chicken breast served in a provolone based light cream sauce, with spinach, shallots and prosuito served over a medium spaghetti. Garden salad and the kick ass rolls they have there were the only compliment to the meal.

Christmas day - Started with a ceasar salad and went to a Balsamic, rosemary and sage marrinated pork tenderloin - slits were cut into the tenderloins and garlic cloves were placed into them and then closed. Baked at very high heat for about 12 minutes. Fresh greenbeans and potato caserole(mashed potato's mixed with sauted onions and creamchease and baked) were the only other parts of the main course.

I am not into sweets so no dessert with either meal.

Eve---stepdad's prime rib, baked pot, and salad

XMAS bfast-- Mother in law--Eggs, rolls, biscuits, gravy, bacon, fruit salad and Rice's country hams (If you have never had one, not loving yet. They are a local family that had made country ham since the 30's. They are only open Oct, Nov, and Dec. They sale about 8,000 hams during this 3 months. They will ship if you are interested.)

Dinner tonight--ME---Fried turkey (2), smoked ham, green bean cass, broccoli cheese cass, cream cheese mashed pot, dressing, gravy, cranberry sauce, fruit salad, pumpkin pie, spiked egg nog, and homemade yeast rolls.

You know I'm really surprised my family doesn't stick to our roots and do an Italian Christmas dinner.

Instead this year I took a 4 pound beef tenderloin, butterflied it, then stuffed it with 4 lobster tails (which I cooked first), added a garlic butter/white wine sauce, tied it up, and roasted it in the oven for an hour.

Top it off with red-skin mashed potatoes and steamed broccoli on the side.

Does the grand marnier mask the pomegranate juice? I find that most drinks that use grand marnier are over taken by the grand marnier... then again that's one of the few liquors that I am not in love with so perhaps I am a little sensitive to its presence.

X-mas Eve - some huge porterhouse steak at Outback in St. George, Utah (on the way back from Zion

X-mas - went to my fiance's god father's house in Veags where they had a whole roasted pig, lumpia, seared ahi, beef caldereta, pancit, shrimp, korean style beef short ribs, chicken skewers, rice and a bunch of other things. I think it was a fairly typical Filipino dinner with a few extras.
