Tuna Steak Marinade
I know, rare and plain with some soy sauce on the side is how most people like their Ahi, but I wanted a change up so I tried this for a marinade:
(all measurements are approx, I winged it)
1tbsp Sriracha (to taste)
2/3 cup low sodium soy sauce
1 minced garlic clove
1 tsp minced ginger (to taste)
1 tsp black peper
2 tbsp sesame oil
1 tbsp white wine vinegar
whisk together to combine, marinade for an hour in the fridge.
Grill fish to desired doneness.

Sounds good. How "cooked" was the tuna after the marination with the acetic acid from the vinegar?
I am guessing only slightly, based on the amount, but I have had it turn out tough after grilling if too much acid is used. It sounds like you may have found a perfect proportion.

I find if I use wasabi prior to grilling, it gives a strange flavor after the cook.
Just a tiny amount was used, so you are right, it really had no effect, plus the marinade only sat for maybe an hour.
:embarrassed: Costco sold a bag of individually frozen steaks.

I didn't know Costco sold frozen Ahi. I've bought the "fresh" ahi (no need to chime in here soopa, I know that it was still previously flash frozen) a few times and it's damn good, but a bit pricey and usually one small and one really large portion. The ahi from Trader Joes is alright, but no where near the same quality. Will have to look into the Costco frozen ahi. Thanks!

I think it may be a discontinued item now, though.
Usually when Costco is canning an item, they put a" * " on the price thing stuck to the rack/wall, but for these, I couldn't even find the price thing anywhere...
