Suggestion Needed !

I am trying to make a very special dinner for a good friend of mine. She is leaving to go to another state. I was wondering what is some special, unqiue dining that I can make at home. Nothing too complicated.
Need some suggestion and instuctions on how to make them. Thanks alot !!!

Wow...howabout let's start with type of cuisine you have in mind. Asian? Western? European?



But, if you're just open to any idea, I'd suggest keeping it simple: some nicely grilled seafood (i.e. prawns, scallops, fish steaks) with vegetables. Easy and relatively quick to prepare since seafood almost pretty much flavors itself.

Smoked Salmon fettuccine.

4oz package of Smoked Salmon (Nova Lox)
Al Dente Lemon Chive fettuccine (About 1/2 a package for 2 servings)
1 Shallot
2 cloves of garlic
1/2 cup of cream
1/3 cup of white wine (any inexpensive cooking wine will do)
1 lemon
Sundried tomatoes (I like to put a lot in, but to your taste.)
A pinch of mustard powder.

Cook the noodles according to the directions, while you are cooking everything else.

Mince the shallot and garlic, sautée over medium heat.

Once they are done, pour the wine over the shallots and garlic then allow to simmer for a couple of minutes.

Pour in the cream and continue simmering until the cream thickens slightly.

Add the smoked salmon, sundried tomatoes and pinch of mustard powder while the cream is thickening. (about 2 minutes total)

Turn off the heat.

Drain the noodles and just lay them on top of the sauce in your skillet. (Don't mix just yet.)

Cut the lemon in half and squeeze from one half onto the noodles. If you do this step before adding the noodles you will curdle the cream.

Mix the noodles with the sauce and serve hot.


For a salad:

Red leaf lettuce.
Dried Cherries
Roasted almonds (my personal favorite are the original flavor Sunkist roasted almonds.)
Creamy Balsamic Vinegret such as Sturky's House Dressing (The lite version is fantastic.)

Serve with a 2002 Trimbach Pino Gris or your favorite white wine.

This meal takes about 10 minutes total to prepare and is very robust. It is hard to screw it up (and I've tried believe me!)

Do NOT forget the mustard powder, but don't over do it, just a large pinch is all you need. Also don't add the lemon too early as I stated before, squeeze it on top of the noodles, then mix the noodles up.

This is one of Mrs CanopyFlyer's and my favorite dishes. It is very easy, very quick, very robust and very yummy. It will also make your friend think you are a fantastic chef.

dont really have any specific cuisine in mind... maybe something you will cook for someone special, but nothing too complicated... thanks for the replies !!

haha, not really. I am just a college student, so I usually grab some fast food after school or cook something very simple at home

Well, you can do something along the lines of a seafood pasta, roast your own tomatoes, and make some good garlic bread. Or pick up a few steaks. Chicken is also pretty versatile and often turns out tasting pretty good.

I forgot one step.

Slice the salmon up into bit size squares, then add to the sauce.

You're welcome, it is a great dish and quick to whip up.
