Something easy to make for V-Day

I want to impress with the wife but I'm not much of a chef. What's a nice easy recipe but different that I can make the wife. We usually eat baked chicken, pork chops, skinny steak, and usually rice since we're Latin. Pasta might be nice.

Salmon, asparagus spears, mashed potatos and a white wine. Very easy to make.

She doesn't like fish. I found a recipe for baked boneless chicken breasts on top of portobello mushrooms. Then on the side either au gratin or a pastaroni and some asparagus and squash. Tube steak is dessert.

Dip the chicken breasts in flour and egg, then dip them in the French's fried onions. Bake for ~25 minutes at 375 degrees.



Put a piece of parchment paper down on a baking sheet. Lay aspargus down on the parchment paper, sprinkle with olive oil, salt and pepper and put in the broiler for about 10 minutes.

Rice pilaf is always a good side dish.

BTW Thanks for the ideas guys.

She's not a big fried breaded chicken fan unless it's Popeyes.

I was going to stove top cook the asparagus in oil and butter. What do you guys think about that. A cook friend of mine gave me that suggestion.

marinate some chicken breasts with your favorite marinade. Cook on skillet or grill. Add your sides. Get some mango salsa as a garnish and color.

Filet mignon
Wrap in bacon (cause everything tastes good with bacon)
Cook in broiler 7 minutes
Flip them and baste them with a mixture of butter, minced onion and chives
Cook another 7 minutes

I agree with the filet. Very easy to do and hard to fuck up. Just cook it a touch over rare. Makes it better if you put crab on top and reduce some port with beef stock as a sauce.

Or try your hand with duck breast.

Easy steak recipe
1
Ribeye-Salt and Pepper grill to Rare and carryover will take it to mid rare
add a Stilton Compound butter when plated(mix softened stick of butter, 1 oz Stilton or blue cheese, fresh thyme and black pepper-put in the fridge to harden)
2
Veggies- pick a mix and do a quick stir fry ( I like broccoli, zucchini, red bell pepper, squash, diced red onion) top with a bit of butter and fresh parmesan or romano

The best way to cook asparagus imo is to bake it.

Preheat oven to 400 degrees

To process the asparagus, grasp both ends with each hand and bend until it breaks. This is the spot where you want to trim the rest of the asparagus.

Get a baking sheet and spread out the asparagus. Spread about 1/4 to 1/2 cup of olive oil to coat (for gods sake, dont measure, just eyeball it). Add salt and pepper. If you have dried thyme, sprinkle that on there too.

Bake in oven for 10-15 minutes, basically until it smells like asparagus.

Doesnt take too long, so make this the last thing you do.

I made this the other night, I do all the cooking. Simple chicken dish with a twist, very tasty. (courtesy of Foodnetwork, Robert Irvine)
May have to adjust portions.

Ingredients:
For the chicken with sun-dried tomato pesto crust:
1 cup sun-dried tomatoes from a jar
2 garlic cloves, quartered
1 cup packed fresh basil leaves
1/2 cup freshly grated Parmesan
Salt and freshly ground black pepper
1 1/2 tablespoons vegetable oil
6 (6-ounce) chicken breasts, with wing bone, skin on

Preheat oven to 375 degrees F.

For the pesto crust:
Blend sun-dried tomatoes, garlic cloves and basil leaves in a food processor. Stir in Parmesan and add salt and pepper, to taste. Set aside briefly. Heat oil in a large skillet over medium heat. Season chicken breast with pepper only. (The Parmesan in the pesto will provide salt.) Brown both sides of chicken, beginning with skin side first. Coat chicken with pesto and roast in oven for 25 to 35 minutes, or until fork tender.

For desert, just buy any box of brownie mix, and make as directed, just pour the batter into a heart shaped baking dish. Throw on some ready made frosting and you are done.

Welllll, I didn't want to post and disappoint. I much appreciate everyone's ideas and will definitely reference this post when I can. That morning, I told her not to cook because I was going to take care of it. She almost freaked out (wife is pregnant btw) and said hell no. She told me straight up that for V-day she rather that I take care of the yard. So I didn't get to cook and I have a cold now for cleaning the back yard in the pouring rain.

Anyone know why asparagus makes your pee stink within like 10 minutes? Never understood how it could work so fast, but Advil takes 30 minutes to get rid of a headache....

Well, I made the asparagus in the oven for the first time, and it was great! Thanks for the idea. I ate it this weekend with grilled salmon and garlic butter Parmesan fingerling potatoes.


Yeah, my pee still smells.
