PUMPKIN SEASON!! (Post Pumpkin Recipes)

I'm slightly obsessed with pumpkin. I love it. LOVE it!!

Last night - I decided to try something out (as some of you saw on my G+) and it turned out amazing, so I thought I would share.

I'll call them Pumpkin Spice Muffins
1 box Spice Cake Mix
1 to 1.25 cups pumpkin (not pumpkin pie filling)
2 eggs
1/4 cup water
1/8 cup oil
Mix well, bake on 350 for approximately 22 minutes, or until toothpick inserted comes out clean.

SO moist and delicious!
I'll have to dig out my recipe for Pumpkin Waffles soon! They're excellent with sage sausage and hot maple syrup.

I have a recipe for pumpkin pie bars that is ridiculous. I'll post it when I get home as I usually free hand it but I have the exact recipe at home somewhere.

I used this recipe as a base to make pumpkin waffles last night:
http://www.food.com/recipe/spiced-pumpkin-waffles-67930

I only used 1 cup of milk, added a bit of vanilla extract, and switched up the spices a bit. I used Cinnamon, nutmeg, pumpkin pie spice, and a bit of all spice to give it a bit of a kick.

They were so delicious!! Served them with sage sausage and scrambled eggs. Felt like a very fall breakfast.

BTW - L's TL - waiting... That sounds delicious!

Oh noes! Not that time of year again. My wife spends $200 on pumpkins, haystacks, etc. to decorate around the house. The pumpkins outside will be there until a week before Christmas all caved in and rotted.

My mom's famous Pumpkin cookie recipe

These cookies are very addictive and must be consumed with a large glass of milk. This recipe is easily doubled to give away to your friends and neighbors too!

Preheat oven to 375 degrees
Use a cookie sheet with some non-stick spray, and/or use aluminum foil
(Pam baking spray works really well and has a sweet flavor)

1 cup Pumpkin (you can buy the canned pumpkin, it works fine)
1 cup sugar
1 cup shortening at room temperature (Crisco)

Combine well.

Add these in order while mixing

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1/2 tsp salt
1 bag of chocolate chips
1 cup raisins
1 cup chopped walnuts

Use a tablespoon and just glob them on the sheet, about one or two inches apart. Bake for 12-15 minutes only. Let them cool on a cooling rack or set them aside to cool. They will taste better at room temperature.

COVER THE COOKIES after baking, they will go stale.

Thanks for the recipe Cruz!! Sounds exactly like one that my friend's Mom used to make and they were so damn good! Can't wait to try these!

I'm attempting pumpkin spice bagels this weekend and will try to whip up some sort of spread to go on them. If they turn out well I'll share the recipe!
