Korean Style BBQ Short Ribs
Korean Style BBQ Short Ribs
I've found two pretty darn good marrinades (Mother's Best and Momasita's) for Korean Style BBQ Short Ribs. The problem I have is finding reasonably-prices, decent short ribs. I can either find cheap, fatty ribs or expensive, lean ribs. Most standard grocery stores don't carry them. It's either a butcher shop or asian market. Anyone have suggestions of where to get the meat?

You can't find a decent Korean grocery in SoCal???

I said the asian markets typically have pretty fatty ribs. While some fat is necessary for flavor, I don't want an instant heart attack.

recipe? How do they get it nice and tender? Slow baked? I'm trying to make some bonless BBQ Pork and have the same marinades.
My way has been rub marinade all over........ let sit in fridge over night and bake/grill. Serve with white rice.

These are beef ribs and they usually come out a little on the chewy side. That's one of the reasons I'm asking about better quality meat.As for marinade, Mother's Best or Mama Sita's as mentioned above. These can be found at asian markets - maybe regular one's too, but I never checked. The good thing is I just throw them in a ziplock bag with marinade for about an hour - two hours tops or the flavor is too strong.
Search around more asian markets. I'm korean, I always get my meat from places such as Han Ah Reum or Grand Mart, not sure if you have any of those there, but the meat is great, and doesn't have much fat on it.

just make the marinade. its just soy sauce, sugar, onions, scallions. salt and pepper to taste. am i missing anything?
i dont know about you but the meats at the korean markets around here are fine. thats what theyre made for. theyre supposed to have a little fat but not a lot. the ones you should find at a korean grocery is essentially the one you want to use for "galbi"
also..."han ah reum" are korean grocery stores, located mostly in major metropolitan northeast US cities with a large korean population. not sure if they exist on the west coast.

^if you want to eat it at a restaurant, its always going to be overpriced.
if you make it yourself, it should be significantly cheaper. but dont except it to cost the same as a double cheeseburger from the dollar menu. it taste good, thats why its expensive

oh yea, i forgot to add garlic to my list.
these are the things you need. (or at least how i make it)
the beef (galbi)
minced garlic
sesame seed oil
soy sauce
brown sugar
sliced onions
chopped green onions
salt and pepper to taste
i never heard of anyone using pepsi or coke ever tho. i wonder how it taste. its expensive to make galbi so i dont think ill be trying to soon. if it aint broke, why fix it?
also, to those who are referring to the all you can eat BBQ joints, its good if you want to eat a lot but not when you want good food. the meat there is significantly shittier than quality places and how they can afford to provide all you can eat of galbi at those restuarants is beacuse the meat is filled with fat and not as tender and if you would buy it in the supermarket or if you went to a quality restaurant. in essence, you get what you pay for.
i prefer to go to a good restaurant with quality meat than a shitty all you can eat place. if you already eating galbi at an all you cant eat place for $16-$20, you can get a full servings worth of galbi at a quality restaurant for probably around $22. only a couple dollars more, it taste better and youre still going to end up full but i guess that depends on your stomach capacity

Doesn't sound like the sauce is too difficult to make. Why don't you just get your mom's family recipe?

If not.
Curtains for ya, all of ya.
I cook for a living. Here is my recipe for marinade. Since I love azine so much here u go
To your taste, mix these ingredients (always taste the marinade to see if you like before applying to the raw short ribs)<-- the better the quality of short rib for example prime cuts, the more marbling you see in the meat, the more tender it will be... athough there is a way to make cheaper cuts, tender.... see below.
Soysauce (yamasa or kikkoman)
Scallions also known as green onions
Finely minced garlic
brown sugar
organic sesame oil
brown sugar
salt + pepper
finely minced kiwi + asian pear ( if available and ripe )
^kiwi is highly acidic and will denature your short ribs to make them tender. You will have to let the marinated short ribs sit in the fridge for a couple hours to get the best flavor.
Bon appetit!!!
