I'm still good to go! I'm actually thinking about making it again with a few changes to the recipe.......

I'll update if I do. As long as you have 4-5 people eat it, it's not too bad. 1K calories a person.

I'm doing it again this weekend - I'm not going to use Italian sausage this time; it was a little too spicy. I'll either put in beef or just get normal brat sausage in there. Might switch up a few things, add/deduct a few things.

Its a pit, not a low rider body nore bloodline... He is very lean and tall and can climb trees a good 20 feet I would say.

Mmmm, bacon....

Anyway, I'm thinking of making this on Tuesday and had a few questions. First, what kind of seasoning did sprinkle over the bacon lattice (nice braid, btw.) Second, how much of the chipotle cheddar did you wind up using? There's no good delis around here, so I'm going to have start searching for an acceptable source of bacon and sausage.

On the cheese, you can use as much or as little as you like...that was just something I added. I like cheese so next time I will use more.

The seasoning is just pork rub.

Unfortunately, bacon explosion was vetoed due to all the impending holiday feasting and lack of any paramedics at the get together. But I'll be having another one soon after with a different group of people who truly appreciate bacon in all its glory. I hope my couch survives.

In the Holiday spirit, I decided to attempt this again. I made 2 of them this time and one of them I was able to do a 7x7 weave due to the size of the bacon.

I decided to use a smoker this time, they cooked at 225-300 degrees for about 5 hours and at the end I put some more bbq on them. On to the pics:
