Gourmet Chicken Salad

None of the measurements below are written in stone, so feel free to add more/less if you'd like.

1.5 lbs cooked chicken breast(2 large cans)
1/4 cup toasted & slivered almonds
1/4 cup white or dark raisins
1/2 cup Hellman's mayo(more or less to taste)
2 Tblsn minced onion
1/2 tspn celery seed
fresh black pepper to taste
1/2 tspn kosher salt(to taste)
pinch of granulated garlic
pinch dried parsley


Best to combine ingredients 24 hours ahead of serving. I normally use Hellman's Light mayo...you really can't tell it's low fat in this recipe.

I use dried minced onions in "salad" dishes...just gives a better flavor, less onion smell.

Variations/Substitutions:
Pecans
Chopped hard-boiled eggs
Chopped celery
Chopped roasted peppers
Sunflower seeds
Fresh seedless grapes
