Blueberry Lime Salsa
A friend of mine sent me this recipe from a blog she frequents and it was a hit in my house!
1 cup fresh blueberries
5 medium strawberries
1/4 red onion
1 teaspoon lime zest
juice of two limes
1/3 cup fresh cilantro leaves
1/2 avocado, chopped
salt and pepper to taste
Combine blueberries, strawberries, red onion, lime zest, lime juice, and cilantro in a food processor and pulse until you read desired consistency. Scrape into a bowl and fold in chopped avocado.
*I think the next time I make this I may leave out the avocado, add in a jalapeno, and try it with elephant ears. The last time I made it, I cut flour tortillas into triangles, lightly fried them, and spinkled with cinnamon and sugar to serve with the salsa. It was wonderful, but I think I want something a bit more bread-like.

we make big tubs of salsa about every 3 nights here at my house. Im going to the store to buy some groceries and make pick up some stuff for this
